Our broth and noodles are made fresh everyday to make the best ramen possible for our customers. Miso (vegetarian option), Shoyu (soy sauce) and Shio (salt) soups are the three bases used for our ramen. The options for toppings include bamboo, bean sprouts, butter, corn, green beans, green onions, marinated pork, nin-niku (blended garlic) and wakame (seaweed). Gyoza, also known as Potsickers, are handmade daily and are the favorite of many. The Teriyaki Chicken is served with our homemade teriyaki sauce, fresh white rice and spicy pickled cucumbers. Cha-han (vegetarian option), also known as pork fried-rice, is served with a cup of Shoyu broth on the side. Stir Fry (vegetarian option) is a wok-fried medley of bean sprouts, cabbage, carrots, green onions and shitake mushrooms. During the Summer months we feature traditional Japanese Cold Ramen and Toshi's Ramen original Cold Salad ramen. These noodle dishes are served cold with two kinds of special house dressings and vegetables.

Great tasting ramen but no choices for vegetarians. Does not seem to be an option to substitute tofu for the pork. Vegetarian choice = 1. A ramen bowl with bean sprouts and green onion was the only bowl with no meat. No cabbage, corn, eggs or pureed garlic for the 10% of Eugenians that are vegetarian.

First time here although I have wanted to stop by for a long time. My son and I were in the area and it worked out.

Great customer service, as they greet each and seem to know their locals who are return customers. This place was busy as we came in towards the afternoon closing time of 3pm. We were served right away and the food did not disappoint! Quality ingredients, the right amount of flavors and noodles done perfectly. You select your base and trimmings and they whip it up for your pleasure. Only problem was we wanted more!

We tried this place for the first time yesterday and we went back again today...
The food is fabulous the ramen is absolutely delicious the gyoza are very tasty and you can tell they're homemade just like the ramen... We had one person take our order yesterday who was so extremely friendly and welcoming, thought maybe we just got lucky getting them, went back today and a different person was working, again same energy so friendly and laid back. Everyone here seems like they genuinely enjoy their job and talking to people. It was packed both days we went, yesterday there was a line out the door but definitely was worth it. Not to mention the big bowl of ramen that we got was $8.50! Toshis is a Eugene classic. I may be wrong but I feel like this was the only ramen place for a while. The dining is an intimate space that gets pretty busy. If it is not your thing to be crammed, you can always do takeout! They also have updated their outdoor dining space. Their service is phenomenal, always kind and efficient. Their broth is rich and garlicky; the noodles are made fresh, and it shows. Aside from ramen, my favorite menu item is the spicy cucumbers. Which is a bit random but they're just so good! I am going to be honest, while I love Toshis- it is not my favorite ramen spot. That being said, it is still a solid choice and I will never not go here!

Best ramen in town! We crave this place all the time. Amazing flavors, fresh noodles, great service and so quick! You need to try this place if you're needing your ramen fix! I really appreciate that's it's not an outrageous cost(s) to add additional toppings, which makes this place so fun to try. Pro Tip: Get the full spicy option if you like your's with a lot of kick! And prepare to stand in line, sometimes outside, but so worth it!

I went here early evening on Thursday and I had the miso ramen, with corn and it is so good. I sat at the bar and waited for my food. It was quite busy in there, with a long line that was worth the wait. The environment is good vibe, the staff is efficient and friendly.

My friend and I both ate the Corn Nin-niku and absolutely devoured it. We ate our meals on Toshi's outside patio on a beautiful September night. The only thing that would change my 4-star review to a 5-star review would be the addition of hard-boiled eggs on the menu, but Toshi's produces delicious meals regardless of the egg absence. :)

Everything I had here tasted very bad! The ramen broth tasted like dirty tub water and the gyoza tasted like dirt. Also, both dishes I had tasted extremely salty. So salty that it played a major part in the taste.
