Paying in a restaurant is for decor and service, eating in the streets gets you straight to the heart of it all - the food.  Cheap, simple, and perfect for nearly all occasions rain or shine.  If Bourdain prefers meat on a stick to fine haute cuisine dining, then maybe the rest of the world is onto something.
