The batter isn't really traditional fish and chips. Its a bit of a cross between tempura batter and fish and chips batter. In that its much lighter, and not as thick on the fish. You don't get that sort of double layer effect you can get with some batter, where the outside is brown and crisp, and the inside white and stodgy.
