Located upstairs in the Richmond Public Market, Xian Cuisine is a humble stall with the biggest steamed buns I've ever seen. The menu is heavily wheat-based with Northern style noodle soups, dumplings, pancakes and steamed buns. The pictures for sesame griddle cake with beef, pan fried buns and the Chinese pork burgers were particularly tempting.
* Chinese pork burgers ($5.50): Filling, rich & porkalicious. Two "burgers" or toasted thick steamed wheat buns filled with a very fatty chunks of tender stewed pork, with five spice type of flavor (star anise, cloves, cinnamon). The buns were fluffy and not that soft. Two burgers are enough for a meal.

So I got addicted to this place, and started coming almost every day for a few weeks. For the value and flavor, I don't think there is much competition. My go-to dish is still the beef noodle soup. I think this place has the best chinese pulled noodles in Richmond. They're so freshly made and chewy. I haven't tried the Broadway noodle houses in Vancouver yet, so I can't compare.
I did try the lamb burgers but found them not as delicious as I had hoped for. They're ok, not bad, but not great.
The cold noodles are good. There are several kinds of cold noodles available. I think the "liang pi", or cold skin noodles are the best.
The red chili wontons are good too. They can be quite spicy but delicious with the tossed scallions.
The small dishes are tasty too. I usually get the sliced pig's ears, or the beef tendon.
They sometimes get really busy during lunchtime and it can be quite a wait. The owner knows more English than he admits, but you can get by with pointing at the menu. I observed that he sells quite a lot of the mantou buns, but I haven't yet tried any yet.Listed in: Favorite Noodle Joints

Located in the heart of Richmond Public Market and on the 2nd floor,
Xian Cuisine is one of the most recommended food stalls in this
interesting food court. It's quite a contrast to the new and modern
Aberdeen Center. Disheveled and a bit run down, these are hole in the
wall food stalls that seem more popular than the fruit and meat stands
below.
The menu is extensive but luckily there are many pictures to display
what you can order. Nonetheless, even with this system, I wasn't sure
if I was ordering what had been recommended by chowhounds.
The first dish I wanted was the knife cut fresh hand tossed noodle
with lamb in soup. I found this fairly easily by looking for fresh
cut noodles. The broth was warm and tasty, but I found it slightly
salty. The lamb meat was tender but pretty simple. I liked the
noodles much more and have had similar noodles at Taiwanese places notably 5 Joy in Foster City, California. The noodles are doughy and delicious and fill you up.
The second dish was ro jia mou and I couldn't find it anywhere on the
menu. Luckily when I pronounced it with my poor Mandarin, the owner
immediately understood. A few minutes later, the Chinese hamburger
made with lamb arrived. The lamb meat was juicy and the first bite
released a bit of the juices. The bun was warm and was able to absorb
some of the juices. The spices were well seasoned throughout and I
could see why some were huge fans. I like a fattier cut of meat, like
stewed pork belly, whereas the lamb was very lean. It would have been
nice to have some vegetables as well.
Overall, I enjoyed trying the regional cuisine, but don't think I'd go
out of my way to visit the rundown Richmond Public Market or the food
stalls unless I wanted to hit more than one. Unfortunately for us,
Xin Jiang Delicious Cuisine, our other stop was closed.

* Xian style pulled pork *
Rou jia mo (AKA Xian style meat sandwich). They make their rou jia mo with pork, and it is good!
After you order the rou jia mo, they make the bai jimo (a flat bread resembling a homemade English muffin) and stuff it with a juicy moist pork (Xian style pulled pork anyone?). They cover the flat bread on the inside with a bit extra of the pork's juices to give it a slightly moist inside but a crunchy outside that holds up really well.
The perfectly tender pork has a complex spicing. I picked up definite notes of anise and cardamon. But there is a lot more in there. I would bet it is a very complex spice blend. Delicious.
The rou jia mo come in an order of 2 for $5. It was VERY filling. I didn't need anything else for lunch!
The menu also has a large variety of Xian style hand pulled noodles, featuring a lamb broth. I made a mental note that next time I'm going to have to try those as they looked really good as they were coming out of the kitchen.
I'll definitely be back! -

Awesome noodle place in Richmond's Public Market. They make the noodles fresh and right in front of you. Ordered both hot and cold noodles and nothing disappointed. If you're not vegetarian, there's even more selection.
A definite must if you're in Richmond. -

Within the Richmond Public Market, amongst all the other Chinese food stalls. Came here without reading any reviews (didn't have time and no internet). But I did the first walk around and scoped out which stalls had the longest lines. Xian Cuisine and the Peanut Bubble Tea place were the most busy, so I made like a lemming and followed in those lines like everyone else. Ended up getting the cold hand-pulled noodles with veggies and peanut sauce. I liked that my noodles had "character" - in that each noodle was a little different from the other. It was tasty and the best part about Xian is that they provide a jar of homemade hot sauce at the counter for you to take however much you want...that is some hot stuff (!) and definitely amplified the flavor of my dish. I also loved the chewiness/al dente/"teeth bouncing" level of the noodles. Very well-timed cooking on the noodles. Wish I had more time to try the other stalls, because Xian Cuisine definitely made me want to come back to Richmond again.

this place is amazing. located in the Richmond Public Market second floor, close to Xin Jiang stall -- the other one I wanted to try but was closed. the hand pulled noodle here is excellent, good toothiness with knife cut portions. broth excellent see picture. the meat sandwich was also amazing fatty soft pulled pork. couldn't eat the bun though since wasn't made fresh (reheated, dry, but would be better if not as thick and got one fresh). they were out of the pan fried dumplings. in any case, come to here, President Plaza and Crystal Mall for the best regional chinese food stands. impressive.
