My wife and I lived in Asia for two years and over that time, we developed quite a taste for Asian food - especially some Korean and Thai dishes. In fact, I remember taking a Thai cooking class in a hill tribe village up near Chiang Mai in northern Thailand. The key to making authentic Asian dishes is starting with the right ingredients. It can be tough to shop when you live overseas because most products are labelled in their own language. But, in a great little market like Win Tai, everything is labelled in English. Walking around Win Tai was like a walk down Patpong Road in Bangkok - the aromas, the sights... Sadly, the prices are more Canadian than Thai! But, nonetheless, Win Tai is huge and offers a complete selection of Japanese, Korean, Thai and other Asian ingredients (canned, bottled and frozen). They even have a little section with fresh Asian produce. And, at the rear of the store is an Asian butcher shop (complete with those headless ducks smothered in red sauce!). If you want a taste of Asia without the long flight, try Win Tai.
