WONDERFUL FONDUE WITH GREAT WINES AND ROMANTIC VIEWS
Thanks to my fellow Yelpers - the hubby and I decided to make reservations for dinner at the Walliser Stube while we had downtime after a business conference.
Located in the AMAZINGNESS that is The Fairmont Chateau Lake Louise, it is billed as one of the two high end restaurants in the massive resort.
We showed up (in business dress attire) for an "on the early side" reservation and that ended up being BRILLIANT because we were seated right in front of the large windows with a stellar view of Lake Louise.
SO ONTO THE FOOD...!
We took Dave H.'s advice and did the fondue dinner without question! We started with the truffle cheese fondue which was wonderful and I thought it was also nicely counterbalanced with a tart light salad.
Next we both went for the bison. We are in Canada and when am I gonna get fresh local bison - this should be a no brainer for the meat eaters of the world (you can get beef tenderloin ANYWHERE people!). It was perfect in the boiling broth mix! They offered some (skimpy) par boiled veg with the meat course as well - but that was only useful is placing on the end of your meat skewer to keep your meat in place! Additionally, they had a tower of dipping sauces which were TOTALLY UNNECESSARY - the bison was so perfect and lean and delicate it didn't need any additions because in the end it was only a distraction from the wonderful flavors of bison!
Lastly, we had the dark chocolate fondue and that was lovely - I especially enjoyed the fresh fruit and banana bread cubes. And Dearest Dave - I totally made a waxy mess trying to toast my marshmallow :( Good tip but alas my fine motor skills suck while drinking!
This place has a lovely lodge feel with lots of ornate wood work and floor to ceiling wine refrigeration in every room. We tried to keep costs in control so we each tried some white wines by the glass - The Blasted Church Fuse was great and easy to drink - very light bright fruity white!
And speaking of cost - I would say per person we payed $10-15 more than some well known lesser fondue chain restaurants ( IE "Melting Snot"). I'm cool with this fact cause the setting and the views are unparalleled of Lake Louise!
Finally, our waiter, J.C., was wonderful and extremely knowledgeable about the food and wine as well as fondue culture/tradition.
Don't bother getting anything else but fondue here - you can get steak anywhere - go with fondue! Feel like you are in 5 star Switzerland when you are really in the 5 star Canadian Rockies Paradise that is Fairmont Lake Louise! -

With a menu made of mainly of high-priced fondue, this is a place that needs to supplement the food with great service and atmosphere and for the most part delivers on that. We had a cheese fondue with porcini mushrooms and shrimp cocktail starter.
The shrimp cocktail was very nice with a half dozen large, beautifully poached shrimp served over a mix of greens and smaller shrimp dressed in a cognac mayo. It was very good and a worthy of the near $20 price.
The roasted garlic and porcini mushroom fondue was very rich with good flavour. It was served with some poached vegetable and a basket of bread. It was too much for one person, if sharing the $40 price is not outlandish.
It was a nice dinner, with attentive service and nice surroundings with a view of the lake. Probably wouldn't visit again, but was glad to have the chance. -

You spend a lot, but you get a lot.
It was a beautiful room and our server, Tina, was absolutely first rate.
We followed her lead when ordering which meant we went fondue all the way and didn't regret it. I would suggest doing the same if you are at all on the fence.
My wife went with the truffled cheese which was a great move. I went with the beef/bison combo. The bison is better than the beef, but the combo was nice. Don't miss out on the bison. With the meat fondue, you get a selection of six sauces, each of which is good, but frankly none of which is necessary as the beef and the broth are pretty tasty to start with. You also get some veggies with both the cheese and the meat fondue dishes. I can't speak to the quality of the non-fondue fare, but it seems like you can get most of those things elsewhere without quite the financial pain.
For dessert, they offered us a half-order of the chocolate fondue, perhaps because we were on our honeymoon. The waitress recommended the Toblerone chocolate and I have to believe this was the best recommendation of the night. The fondue was so much tastier than your run-of-the-mill chocolate fountain or chocolate-covered-fruit plate. I went a little off the page and cooked a marshmallow over the table candle before dipping it in the chocolate and I have to say this was probably the tastiest bite of the evening. I'd give it a try.
Look, you're going to shell out some serious coin, but you're going have a great experience if you go with the fondue. If you go with the other entrees, you are on your own.
