Best steak ever. Service was phenomenal, and they sent us home with little dessert bites as a surprise. We had enough food left for a second dinner two nights later, and the steak was still delicious.
If you're in Whistler - you have to go to Sidecut! -

It was our last day at Whistler and we wanted to enjoy a meal in Whistler before we headed back to Vancouver. The bf selected Sidecut, and he made a great decision! This place was located at the Four Seasons Hotel and you could easily miss this place if you don't have the patience (when you're hungry like me).
We ordered the NY Strip Steak with vegetables. The steak was very juicy. There were 8 different sauces for the bf to dip his steak in. It was delicious. The sauces reminded me of the experience I had when we went to Morimoto in Napa Valley where we ordered the Morimoto Sashimi and there were 5 test tube sauces that came with the sashimi. Awesomeness.
We also ordered the Ahi Tuna Burger for $21. My favorite ahi tuna burger is at Joey's but now I think this has become my top-fav. The ahi tuna was pan-seared and served on a bed of green spinach with shittake mushrooms on a kaiser roll. The spicy and sour sauce complimented the burger. YUM.
Great place to go for lunch! Definitely will be back. :) -

Excellent steakhouse with nice modern atmosphere. Service was fantastic. Nice options for meat rubs and sauce choices. The little bar area had a happy hour going with entertainment that looked very nice - will have to try that some time.
Expensive, but worth it for the right occasion. -

Food was insane and so was the service. I highly recommend this place and will be coming back for sure. Don't worry about the short walk to the four seasons in the upper village, because its worth it.

I would go back again for the service. The host, hostess, and waiters were extremely attentive and friendly, often coming by to see how we were doing and chat a little. Even after our meal, as we were in the process of paying the bill, they inquired as to where we were staying and helped to coordinate our transportation back to the our hotel. GREAT.
The steak was excellent, and their homeade, daily made steak sauces added tremendous dimension to the steak. I would go back again! -

You want a steak, and you're in Whistler, you will not be disappointed is an understatement, to the fact your steak taste buds will be wowed. Staying at the Four Seasons for the weekend, me and my partner decided to try the restaurant that is housed within. I made a booking for 9:00PM on the night we came in, as this was definitely a hot spot on the mountain in terms of food, but oddly it is located off the Upper Village away from the busy spectacle of the Lower Village of Whistler. I could not find an earlier booking, and I am not used to feasting so late into the night, but what came was a meal I would eat anytime of day!
Coming down from our room this place is located through the lounge area of 'Fifty Two 80 Bistro & Bar', once you cut through you will see the big vertical red lit sign "Sidecut". I was greeted by David, the manager of this place, and he seated us at a table near the back, where the circular fireplace was. When you walk through you notice that this place is spactious, not too brightly lit, and has that ambience of fine dining experience in the mountains. He was very imformative of the restaurant, the food, the specialties, his own preferences and also provided us two complimentary champagne glasses to start.
Our server, whose name was Mark, kept the great service coming when he introduced himself to us. My partner asked about many items on the menu and his take on them from the preparation to personal preference of the dishes. The key that is emphasized here is that they use 40 day old aged beef, the top 2%, also you have a choice of six individual rubs and which one would fit your palate in regards to the meat you choose is entirely up to you prior to even having this thing cooked. Also another point in their special preparation of cooking is the use of an infrared grill that keeps the juices in the steak, more on this later.
The first dish that is usually brought out is the bread, and here is no different, till you take a peek at what has landed on your table! A hot assortment of crumpet like pieces and small cheese puffs is probably the best way to put it. Along with some freshly whipped butter, these treats prior to getting to the meal were wonderful. We both had to control our stomachs from the cheese puffs as we kept on eating each one.
We stuck to the main course, which was two different steaks, and two sides, as this is where you order just the meat, and anything extra must be added. The two sides we had on the night were the creamy spinach and mac and cheese to accompany our cooking meat! I had a baseball cut New York steak with the special 'Edison's Medicine' rub, while my partner had the delicious Rib Eye steak with the Black Angus rub. With the bread pieces already preparing us for the meal to come, we were excited to see how this restaurant compared to other places I have had for steak. Presentation was excellent, as they do not load the plate with anything else except that prestine cut of meat you ordered, also with a recap of how you wanted it done. I have my steaks 'blue' and this one was done right, without any doubt as they pride themselves on this.
My partners steak, which was the Rib Eye, practically cut like butter, the marblelization, or fat, but we will use the prettier word, was amazing, every bite was so flavourful, the mixing of the rub and just the quality of the meat was to really go the extra mile for. I have not even gotten to their special steak dips which came out in a trey. Usually your used to just seeing the normal A-1, HP type sauce, not here, all of this is in house, and very unique. They come in these little medicine vials, and each is so different, and really make for a different meal. You can have your meat the normal way, or change it up with a twist, and these 8 sauces enhance the experience.
I have had steaks before at some great places, and this place takes the cake in the food, but also in the entire experience. A big thanks goes to our server Mark, who made the night fun at our table, talking about his experiences with the food at the restaurant, and knowing exactly what he was talking about with the type of rub and the meat that we were going to choose. Great passion also from David, the manager, who even at the end offered to call us a cab, not knowing we were staying on the property, but that care for the little things definitely adds to an excellent night.
Another thing to point out, you can buy/purchase the rubs for your own cooking, and Mark brought out a plate with all 6 strands to allow us to try each. To be able to take something like this away from the restaurant and try on our own cooking at home will be fun. Mark also advised us to pack the piece of steak that we couldn't finish, luckily we did, even cold, it was delicious! Thank you again, I will be back! -

Just like the hotel this place is in, this restaurant is awesome in terms of service and attention to detail. This is the first "nice" restaurant my kids have been in (2 and 4), and the they really went out of their way to make our kids happy while we adults enjoyed a nice dinner. The weather was beautiful and we sat outside on the patio near the live band.
Aside from the usual coloring paper and crayons to entertain the kids, the kids menu had a great selection of kid pleasers; mac and cheese, pizza, etc. even a separate kid's dessert menu. They even told us they could make them nearly any kind of non alcoholic drink we wanted, and threw together a great fruity combo. Between courses, the waitress even brought out extra veggies and dip to snack on, then a small cup of cheerios and raisins after their meal, and added some chicken on the side to of their mac and cheese for extra protein. When the temperatures dropped with the sun, the space heaters were placed conveniently near our table, and she even offered to bring out blankets for the kids.
Overall, the starters and appetizers were awesome. I loved the wild mushroom carbonara and the portions were just right. Since this was a steak place, I went with the 6-oz tenderloin with the house rub. While the cut was just right, I wasn't too fond of the rub, and would have just preferred this plain. Additionally, we ordered the steaks medium-rare, and mine was medium, while my husband's steak was very unevenly cooked. One side was actually well-done (even an inch in from the side), while the other half was closer to medium. The sauces from the selection were just okay.
Overall, I thought we had a very enjoyable evening, the kids were well behaved, and the service was outstanding. The prices were even slightly less than top steakhouses in Seattle. I felt I had to dock a star off for the less than stellar steak as this is what they're known for. I'd definitely come back with the family again. -

What a disappointment. I don't know if it was an off night, but we had to pull aside the waitress at the end and tell her that while we thought she did the best job she could, they need to get more people working there. She was handling our entire section and you could tell she was working really hard, but service seriously suffered.
We went for my husband's birthday dinner and were promptly seated and given menus and greeted by the waitress who asked if we wanted any drinks. We hadn't even opened the wine list yet, so we said we weren't ready. This was the first mistake. It was at least another 15 minutes before she came over. By that point we were ready to order so luckily she was able to take our order at the same time. We got bread about 25-30 minutes after sitting down. Our salads actually came in good time, about 15 minutes after ordering. It took forever for all courses of our plates to be cleared and the wait between courses was way too long. Dinner came 30 minutes after the appetizers. After finishing that, we waited and waited and waited... just for some acknowledgement. We sat for at least 15 minutes with dirty plates in front of us before our waitress came and cleared up -- you're telling me that a restaurant at a 5-star hotel doesn't have a bus boy to clean up the tables? our poor waitress was running around like crazy - this is not something she should have to do. While she was cleaning up our plates, she asked if we wanted dessert, we didn't really answer one way or another. We didn't see her again for another 15 minutes. This time she stopped by and said she had something on the way for my husbands bday. it was a really nice gestures to have 2 little ice cream cones. We finished these pretty quickly and my husband went to the bathroom. When she came to get the plate, I asked for the check -- I looked at my watch and it was a full 20 minutes before we saw her again with the check. At this point we had to say something - and as noted above, we truly don't think this was her fault but this is ridiculous management for a restaurant at a 5-star hotel. She apologized, didn't take anything off the bill or anything and was quick in getting our card charged and back to us.
Food-wise, it was pretty good. I liked the beet salad and my husband had the wedge. The bread basket was good. I would avoid getting any of their multiple seasonings. I asked her which one was the simplest - i'm a believer of not covering up a great piece of meat with heavy flavoring or sauce - she recommended Earls and still, both my husband and I agreed it would have been a lot better with just some salt and pepper. We got a side of asparagus, which was fine, and the white cheddar potatoes au gratin were excellent. Best thing there. The steaks were cooked well, but far from the best we've had.
Overall, the service was atrocious. I don't mind going for a long dinner, but we were there 2 hours and 15 minutes for salad, a steak and an ice cream cone. We did not even have a full bottle of wine as only my husband was drinking so he just ordered by the glass. I hope management takes note. -

This place deserved SIX stars!
We were in Whistler on a Monday night, and it was late October, so we had a very quiet night - the staff could full concentrate on us.
We started with the foie gras appetizer - my girlfriend was absolutely blown away - as the server mentioned, they lose money on this appetizer - it was as creamy and rich as it gets.
What rocked my socks was the wild boar, double cut chop, with a Morrocan rub - (you get to select from 6 rubs) and every dish comes with SIX SAUCES!!!!!
I thought the rub idea was for fat guys slathering BBQ sauce on southern fried cooking - but the boar came with a spicy blackened, crusty outside, and a juicy moist perfect inside.
I had to force myself to use the sauces, every bite was heaven, just from the rub.
Zagat rated this place as the best restaurant in Whistler - and I WILL be back - the very next time I'm in Whistler
I won't rave on about the fantastic, attentive service both from the manager, the very knowledgeable and attentive waitress, and the cooking staff (My girlfriend got an amazing chocolate assortment prepared as her birthday feast) - you would expect all of that at any five star, outstanding restaurant.
The rubs are one of a kind - and having six sauces come with every dinner makes for an amazing assault on the senses - every meal now has six different flavours!
I have no idea how creamed spinach can be made crunchy, but it was the best I've ever had.
Did I mention the gorgeous room, and the view of the cascading stream out side?

8/2011: Fantastic restaurant, group of six arrived for a late evening dinner reservation after a long day on the mountain. We decided to order the Cowboy meal which is a fixed price steak meal for four people at $275 and includes a 52 ounce porterhouse, four appetizers and side dishes from the menu PLUS an $80 wine credit to use off their wine list. We ordered two of the lobster and prawns appetizer dish and it was awesome! Other two appetizers were the abalone dish and the scallop dish. Our side selections was pretty straight forward, asparagus, wasabi mashed potatoes, potato au gratin and roasted beets. Steak was monstrous when it arrived, easily a good 2.5 inches thick, we requested the basic dry rub cooked to medium. Our waiter divided it up cutting the filet and strip sections into smaller reasonably sized 1-2oz portions, steak was served with a tray of six sauces ranging from basic steak sauce, argentinean chimmi curra, butter garlic and a couple that I don't recall. T-bone was left at the table for one of guys to gnaw on, it still had plenty of meat including healthy portions of end cut type tastings! Yummy!
Valet parking outside, no charge when eating at this restaurant.
We selected the Chateau D'Argadens Bordeaux Superieur Grand Vin 2007, good tasting bordeaux but I preferred the local wine last night better. -

Between ordering our food, and it arriving, I would say we waited at leat 40 min for our app, and then another 40-45 min for our main's. The food was mediocure, and our steaks were overcooked. The quality of the ingredients was high, they were just not cooked properly at all.
I won't be trying it again. -

We had a great experience at Sidecut! The service was friendly and professional, and the steak delish. I loved how our steak came with 6 gravy boats of saucy concoctions to accompany our meat...ranging from savory butter to spiciness wonder. We will definitely be back next time we visit Whistler!

The service and staff were amazing! The only thing better was the food! The steak I ordered was a bit overdone from what I had requested with the order. When the waiter asked I let him know but told him I preferred not to send it back because I didn't want it to go to waste. The waiter insisted that I let him make it right. While they were preparing my new steak they sent out a salad so I could still eat with my husband. When my meat arrived they even sent out fresh sides rather than just scooping off what was on my plate and giving it to me. Nice touch. They brought my husband a plate so he could enjoy the sides with me. With our dessert they comped us dessert wine and then with our check brought us fresh truffles. Super attentive staff, amazing food and wine, we will be back. Thanks for a memorable dinner.
