Pizzeria Stratos is a chain of Pizzerias from Trois-Riviere. They are located throughout Quebec, although none are in the greater Montreal area. I first tasted Stratos in Sherbrooke (2 franchises there), where most people actually still think it's a local business.
As much as it is a Pizzeria, Stratos claims to be the king of poutine. With great claims come great responsibilities.
Let me preface my review by saying that I lived in Sherbrooke for close to 25 years, and enjoyed Stratos' poutine at many many occasions. Never at an actual restaurant before this visit, but always with delivery. In fact, it's the perfect delivery poutine especially if you ask for the sauce to be given to you separately from the fries and cheese. Especially under some influences.
That being said, even under no influence Stratos has great poutines, with many different gravies available. Notice I'm using the term gravy and not sauce, a distinction that isn't normally made in French. Poutine should be made with a chicken gravy, with a certain thickness and a rich flavor. None of that powder or canned stuff that you find at most places. And that's where stratos shines. In fact, it's the only reason to try their poutines. The fries are McCain frozen fries, and their cheese is your typical refrigerated cheese curd bag put on top.
We tried two different poutines. I tried the Poutine au Poivre, or Poutine with a pepper sauce. The gravy was very thick, clearly home made, and of a grayish color. It didn't look too good, but it tasted amazing. The addition of the cooked pepper grains on top added to the experience.
My girlfriend tried the Merguez poutine, with the traditional gravy. The gravy was also clearly homemade, with a more orange look and about the same thickness. It didn't feel too hot, but it felt rich and you could smell the spices. One of the best gravies I've ever tasted. The merguez (North African sausages) were in big slices, and weren't so well cooked. My girlfriend just put them aside.
Overall, I had a great experience appreciating the poutines there. The restaurant wasn't anything fancy, and although their have other typical sit-down restaurant options (brochettes, chicken, rice, pizzas), the real attraction is the poutine (for the gravies). Well worth a trip, I just wish they had better fries and fresh cheese.Listed in: Best Poutines.
