    I just did a shoot at Publican Quality Meats.  Two words:  GO NOW!  It is AWESOME.  I thought they were going to have to kick me out of the shop.  I soooo didn't want to leave.
    So they have all kinds of stuff.  They're a full butcher shop, plus they do AMAZING sandwiches with all handmade everything including the bread, plus they're a little grocery that carries only the best of a bunch of random stuff like condiments to span the globe, wine, beer, intelligensia coffee, in house made stock, Frontera frozen pizzas, fresh Burrata and other fabulous cheeses, farm fresh eggs, and the list goes on.  Seriously, these guys are doing amazing things.  I think I'm in love.
    Here are just a few pics which do not even come close to doing this shop justice:
    The fresh meat case.  They only deal in whole animals and break them down themselves.  The cooler was awesome.  I could have climbed inside the enormous pig that was hanging from his feet.  Whole sides of beef, curing sausages, dry-aging steaks... the whole shebang!


    Here's one tiny section of the salumi case.  Most of it is made in house with a few exceptions.  I got to taste several of these.  All delicious.


    This is the adorable head butcher that gave me (and the cameraman) a full tour.  He tried to get me to wear a hard hat (which apparently is necessary when sawing into a hanging cow) but after I convinced him that my hair was helmet enough today, he gave me a demo of the table saw instead.
    He also tasted me through a ton of their products.  I was (clearly) in heaven.  One of my faves was a smoked sable fish that simply melted in my mouth.  Here he's holding a couple of terrines.  I tasted both... they were delish!


    I'd never had blood sausage or head cheese before.  After hanging with Erling for a bit, I'd tasted both... at once.  This is a terrine that's made by boiling a pig head, picking off all the meat (that's the head cheese part), then reducing the pig's blood until the proteins start to coagulate (apparently one can feel the correct consistency when rubbing it between your fingers), then mixing it together with some red curry.  Crazy, right?  It was actually really good.  I don't know why everyone freaks out about blood sausage...it's tasty stuff!


    Like I said, aside from the meeeelion meat product, PQM has a bunch of other fun stuff.  Unfortunately, I only got a shot of the bread baskets.  Every night the baker comes in and creates these beautiful loaves for the store and the restaurant (The Publican).  All the sandwiches are served on them, too.  I got to watch one of the guys baking off some very delicate looking flatbread-like rounds for the sandwiches.  He was doing a damn fine job of it, too.


    You'll just have to watch for the segment to get the whole scoop... or take my advice and GO NOW!

    After a series of stellar brunch experiences at the Publican, I made it here for a mid week lunch.

    It was very busy from 1130- 1pm. The staff was very friendly and I was seated at a communal table within 10 minutes.

    I intended to work during lunch which would not be possible with the communal tables (FYI).  However, I was seated directly across from a former co-worker which worked out well!  Back to the food...

    I started with the green garlic soup- very light creamy broth with garlic (early, not the conventionally pungent flavor), potato and fried leeks. Very good!

    Ordered the 'better than a Gyro' sandwich with pork belly.  The meat was well prepared.  However, the combination of pork belly, condiment (cucumber raita, maybe) was not a flavorful combination.  An improvement in the sauce would have greatly enhanced the sandwich.  However,  the pickled radish and snow pea side was perfect.

    Definitely check out the gelato - Zarlengo's pistachio was outstanding.

    I may return to try another sandwich.  However, the experience was not compelling.  I'll stick with the Publican.

    If there were any high testosterone, meat lovin', foodie destination this would be one of the Chicago meccas.

    From a marketing standpoint, having the word "quality" advertised causes me to think dingy floors, glowing tubes shining it's light on cheap, questionable meat like products. This maybe my penchant for going to lots of discount stores- nothing wrong with that!

    PQM is kinda like that, not really, but instead a beautiful Iberico ham leg lays on it's glass counter full of cured/dry aged meats and cheese.

    Fair warning - this place is packed on a Wed afternoon. It is also tiny. I cannot imagine how this place would be on a Friday/Sat/Sun. Parking is a bit odd as this neighborhood is still a functioning and active meat market distribution center - note you may have to drive around forklifts and trucks and a lot of the No Parking signs will require you to do some math trying to figure out whether it's AM or PM. Recommend that you check out the menu online and order to go.

    I got the yellowtail sandwich described as a ceviche on ciabatta bread with a fresh mint+cilantro aoili and comes with a pickle and potato salad (or other sides) all for $10 bucks.  You also get to sample stuff from the counter while you wait. Fresh, different and delicious!!!

    I stopped in there this morning to check in out since it's only a few blocks from where I live.  Upon entering, there is a fresh and upbeat vibe to the place.  The greeter was happy friendly and all the staff were helpful.  Ordered the "Better than Gyro" sandwich which was as introduced -- delicious!!  it cam with a side of potato salad and a pickle spear.    Even though most of the menu had meat stuff, it's good quality and tasty.

    A lot of folks were coming in to get their upscale butchery cuts of meat and cheese as well.  There is a decent selection and you can see the freshness of the meats compared to what you are used to seeing at grocery stores or even whole foods and this is the kind of place for those too scared to go into the old butcher shops in the area because of their appearance -- plus its hip, new and from the folks that brought you Publican.  It seems like the cuts of porterhouse and ribeye were a bit expensive at $34-$39 a pound, so I've got to try their meats sometime this summer and toss it on the grill to really rate their value.

    Of course with the great weather, everyone wanted outside seating and the wait time was quoted to other who came after me as 12 minutes wait -- awesome (go before everyone else figures out this place.  One thing I would warn folks is that if you are ordering TO GO order, it will take almost as long for the order to be served as if you sat down, so don't try to rush the freshness and quality.  Service was quick and friendly throughout and you can use the time while you are waiting on your sandwich to browse the butcher case.

    If you want a midwestern lunch that's filling and made with quality ingredients and friendly service, come check this place out. But don't try to rush through it, it's not that kind of place!

    Came here on a Saturday around 1pm and only had to wait 5 minutes for a table.  The friendly hostess told me they have changed things, it is now only waitress service for dining in.  I'm sure it is less confusing.

    I do like communal tables, easier to peek at everyone's order.  Ordered the Soprassata Sammy, delish and comes with salt & vinegar chips and a pickle...$10, Iced earl gray tea.....$3.50, good, but pricey.  Next time will stick with the water. Blondie bar.....$3.50, heavenly!!!!!

    With the bathrooms being downstairs, it lets you see more of the operation.  Liked seeing the cooler with all the meats, prep area and the hard hats hanging on the wall.

    The staff is very friendly and so willing to answer all of your questions.  I enjoyed my meal and can't wait to come back.

    Heard about this place from fellow Yelper Allison V.  She said let's check it out and we did.  We had a good time conversing over good sandwiches and the best of it all, she's great company and likes to share, as I do and am.  Since that first trip I've been back again and while I do like trying different items, I ended up getting the same order again.  The pork belly gyros and the meatball sandwich.  It's best when you have someone to share the food with.  A little taste of everything is exciting.  We're not talking the norm deli sandwiches.  Thought out, fine ingredients made into popular but common meal types.

    So the setup is like a meats / butcher shop.  You can buy stuff to take home or enjoy prepared sandwiches and meals on the spot.  They offer charcuterie boards as well.  Aside from the sandwiches which most are here for, they also offer fine grocery items.  Such as fine jams, sauces and spreads.  Crackers, finer beverages, cookies, sweets and breads.  A hodgepodge if you will, of hard to find or unique grocer items to fill your specialty pantry.

    This sandwich shop is uber popular.  On weekdays, regardless of the hour there could be up to a forty minute wait.  When you walk in and see people standing around like llamas, those are people hoping and waiting for a table.  Push straight to the counter and get on that wait list quick.  Otherwise place your order and roll the dice.  I wish there were benches outside or somewhere nearby.  There has to be right??  Maybe an idea the guys behind this place will soon fill.

    Oh yeah don't forget to wash your hands after dining.  Cool views downstairs and wave hellos to the guys.  Everyone is on their tasks.  Employees are on top of their game and do so with a smile.  This is a "must be bookmarked kind of place."

    Paul Kahan gets it right (again). When I first pushed my way thru the masses in this tiny restaurant on a Friday at 12:30pm I feared it would be hours before my party of 6 would be enjoying our sandwiches. Somehow we got lucky...
    We placed our order at the counter within minutes, were seated a minute  later and had sandwichy goodness in front of just minutes after that.

    In my flustered 2 sec at the counter I placed an order for the football, which sounded like some sort of grilled chicken sandwich.  When my chicken came out it looked more like chicken parm. At first I thought it was my mistake, but then later realized chicken parm was actually another item on the menu.  I thought about sending it back, but it was way too delicious. Instead I ate all the chicken, half the bread & made a mental note to run an extra mile the next day.

    Besides sandwiches Paul makes a mean cup of coffee and serves it with an awesome cookie-like treat.  The perfect ending to a tasty meal.

    I had taken in the fare at Publican in the past and I was really stoked to hear about them opening a more casual spot. Located right across the street this place is designed to the nines, which I totally appreciate. It's a small place, but has such a great atmosphere. You walk into deli cases filled with incredible meats and meat product carefully prepared and beautifully displayed. The decor is stark white tile and a vibrant blue, really hip and clean and perfect.

    I was seated immediately despite it being during a packed lunch hour as I was alone. They have 5 communal tables, which I really love. The menu looked great and I ended up ordering a roast beef sandwich with maytag blue cheese, butter lettuce, and smoked onions on country bread. Instead of a bag of chips I opted for the radish salad, which was raw radishes with a wonderful vinaigrette. Perfect! I rounded my lunch out with a beer off of their small, but impressive drink list.

    This place is great. Service was great and timely, atmosphere was beautiful, price point was reasonable, food was perfect!

    Worth the midday trek to the West Loop. 4pm is awkward enough of a time that PQM wasn't busy at all.  How can you not immediately fall in love with a place that greets you with packed cases of meat? I order the sopressata sammy to go - bagna cauda, shaved asparagus, frisee and parmesan on ciabatta. Yeah, I didn't know what bagna cauda was either, but it's a delicious sauce. As my sandwich was being made, I browsed the shelves and shelves of foodstuffs. Mistake. I bought some $10 sweet clover raw honey, because having a recreational beekeeper dad, bee suit and all, has made me appreciate the finer honeys in life.

    Sandwich smells wafting from the brown bag on my lap made me regret getting it to go the entire el ride home. The sopressata was delicious and not hard like the store-bought variety.  Sandwiches can get so boring that when I taste one that really makes me want to shove the entire thing in my mouth at once, well, I try at least. And I'll do it again, because I'm hooked.

    Oh, and it's cool to see a cheese maker come in to drop off a wooden box full o' cheese. There's also some good craft beers. Generally, I avoid places with crowds like the plague, with the only exception being the mall on Black Friday, but it looks like I'll start making another.

    I really want to love this place, but I don't like the changes they're undergoing.

    Having a server in a fast casual place is just awkward. It takes something that's already a little spendy, makes it more expensive, and honestly makes the whole process take longer. I work in the service industry and I'm the first person to understand the role of service. Here, it's totally unnecessary, and makes me not want to dine in here.

    One literally has to walk past the counter, where they could order. I was then asked by the host to wait until the table had been cleaned. Four minutes later I'm lead over. Three minutes later my server comes by with a menu, which I could have already looked at at the counter, when ordering. Four minutes later my server comes back. This is the point where I finally get to order. Then everything happens as it would had I simply ordered at the counter, except I'm brought silverware. Oh, and then it takes longer to pay too (would have already been done before I ate).

    Maybe I'll be back for carryout, but the thought of that awkward service experience makes me thing I'll take a pass for dining in.

    As I waited on Saturday for my package of goods (blondie, loaf of bread, two sandwiches, 4 sausages) at Publican Quality Meats this is what ran through my head...

    "Wonder if Paul Kahan does home repairs?"

    Because let's face it, everything this guy touches turns to gold. So, you know...I'm trying to get an old house in order and thought maybe he could sprinkle some of the magic up in here. I realize, pipe dream. However, let's be honest...if he's behind it, it's sure to sparkle. Paul, if you get into the contracting business...please call me.

    (huge mental jump, I'm aware)

    But for now, I'll just pop in to Publican Quality Meats for a taste of the good life. I'd bookmarked this place upon it opening, I didn't even live in Chicago...when a Friday lunch plunked us into the bustling PQM I was delighted. I returned two days later on a whim to pick up lunch...I'm hooked, let it be known! I'll sing it loud and proud.

    The process: Yes, I've been twice and each time its been a little nuts. The place is somewhat pleasantly mobbed. Not in like a Justin Bieber is walking down Michigan Avenue sort of way, but definitely in a "foodie flock" sort of way. However, despite the somewhat complicated process, both times there have been ample and friendly staff to guide the way. By my second visit I knew what to do and had my things in order. Just look for someone when you get there, you'll be fine. It depends on largely if you are staying or going, but regardless you'll pay and get a number. Trust me, they'll help you. Don't freak. It's all going to be fine when you tuck into one of these sandwiches, trust.

    *insider tip: very crowded at lunch. the tables/seats turn fast, but its not really a sit and stay awhile kind of place, because people are waiting. Grab your grub and head to a nearby park, etc if you like elbow room and to loll about your lunch.

    Meatball Sandwich: darling little meatballs perched upon a lobster-roll like bun (split at the top), heavy and harrowing and fantastic. Served with a bag of chips.

    Better than Gyro, Gyro: It's made with pork belly. I think that says enough.

    The Blondie (dessert): They do one thing dessert like a day and they do it damn well, I polished this off before I made it back to my house and told my boyfriend that I forgot dessert. I forgot (to not eat) the dessert, dear. Good stuff.

    Muffaletta: Large and in charge. It's the quickest thing to get, but also gargantuan. They slice you off a huge piece of the muffaletta pie and you go at it. It's heavy. It's huge. I liked the others better, but I think I was a bit overpowered by the olives. All in all, a solid bet as well.

    They also have $1 coffee, though I think this is a more pleasing process when people aren't camped out everywhere (there's a small coffee bar). There's also a few long coolers and shelves with a small and well curated selection of local grocery products. Everything from Milk & Honey granolas/oatmeals to wine, beer, pasta, produce, jams, etc. You probably wouldn't do ALL of your shopping here, but it's a speciality store that would make you the hero of any picnic.

    Price range: Around $10/sandwich.

    Another win for Paul K, chalk it up...I'll be back again and again I'm sure.

    Self Control.

    I'm practicing, but it hasn't been easy. Especially since one of my favorite co-workers chose Publican Quality Meats as his departing lunch.

    A. I don't eat meat... but I love it and crave it everyday
    B. I'm trying to eat extra healthy so I can be in immaculate shape this summer
    C. I still wanted to go for a run for the day, and I could tell by looking at everyone else's lunch that I was not going to be any kind of shape for any kind of activity after consuming the beast-sized sammies here.

    Walking in during lunch hours, I was greeted by the backs and sides of about 10 bajillion x infinity people waiting for a spot at one of 3 (or was it 4) tables (8 max per table) in the entire place. I'm sure some of those people are probably still there waiting. Lucky/Unlucky for me, my group of 6 had already gotten a table while I was fighting the Friday afternoon suburb to city commuter traffic.

    I didn't want to keep everyone waiting there any longer than they already had and another one of my table mates said there was only one veggie option anyway, so I walked up to the register, pushing my way through the crowded front, eye-ing their freshly brewed lemonberry iced tea (a must!), and ordered "The veggie". The guy looked at me strangely bc that's not actually what it's called, but I hadn't bothered to look at a menu, so I was kinda just taking a stab in the dark. Turns out, there's also a green salad that's veg (and I think they can make it vegan, too), but I didn't know that and when the guy tried to help me in my ordering ignorance and said, "the tartine?". Uhm, yeah. Sure! Whatevs. :)

    Turns out, the tartine is roasted cauliflower, castelvetrano olives, fresh mozzarella, bechamel, pickled fennyl, basil and radish sprouts on miche bread and it comes with a side salad. The side salad had a clear, oily dressing on it but tasted light and delicious atop of my weedy salad.

    Now, remember that self control thing from above? I did it! Well, sort of. Temporarily. I asked for to-go box, cut one single bit from my tartine to try fresh, packaged the whole rest of it up. That single bite was probably more calories than I'd eaten all week and though I tried to convince myself it was 'just okay' so I would be more motivated to get my ass up and run later, it was really, REALLY hard not to stab my knife through the plastic take-out container and ravage the rest of that gat dang'd tartine.

    When I did go home for the day I had every intention of still going out and running... and then I decided I should check on the fridge contents and make sure everything was running smoothly in there. Naturally, the tartine was taunting me and homie don't play that game.

    I never went for a run that day. I, instead, found pure bliss in my perfect, even when re-heated, tartine while wearing stained sweat-pants on the couch and watching Wayne's World. It may very well have been the greatest night of my life.

    Medium?

    I mean, I get it.  We all love Paul Kahan and we all love our meat.  Seems like a win/win, yes?

    Ehhhh....

    I took a detour home from work last week and drove right by PQM so I decided to stop in at about 5:15 to see what all the hoopla is about.

    First and foremost, PQM is pretty small.  This is certainly NOT the best place to come for a restaurant experience.  Seating is limited and it's pretty cramped.

    Second, the meat?  Well, it's definitely not my speed.  I realize I fall into the minority on this one, but I prefer a leaner cut of meat. (Insert shock, horror and disbelief.)  Everything I saw in the case was a super fatty cut or a big, honking sausage.  Nothing lean and nothing my speed.  For those with a taste for the heavy marbling, PQM is your holy grail.  For those that get a little weary when over 50% of the meat in a case is laced with fat, it's kind of a turn-off.

    Well if you can't buy meat, you can probably buy a sandwich, right?  I'd heard great things about the muffalata.  Too bad the only thing on the menu, 45 minutes prior to closing, mind you, was a fried smelt sandwich.  Just not what I wanted AT ALL.

    Sigh.

    I get where you're going, Paul.  But pretty please with sugar on top try not to run out of everything a bit later in the day and perhaps try a leaner cut of meat sometime?

    First time here, just now. Beautiful.

    I got the "better than a gyro" sandwich. I won't lie, I don't know what most of the ingredients on it are, but braised pork belly and chili orange vinaigrette was enough to convince me. And it was bananas.

    I was greeted instantly walking in, everyone was very authentic, friendly, and the space itself was really neat. Old school grocer, from which I would go into debt over, they had all kinds of cool vinegars and spices. Quaint dining area, and the deli/butcher counter was outstanding. Cool knowledgeable guys to shoot the shit with while waiting.

    I got mine to go, only ordered the sandwich, and my partner and I both got free potato salad. Bonus cup.

    I will be ordering every sandwich on that menu. And I am intrigued by the raw cheese at $30/pound. It shall be done.

    I've had publican quality meats bookmarked since they opened. I mean, how could I not? Paul Kahan having a deli, butcher, and bread place all in one, how can this not be good? I will stop posing rhetorical questions and get more onto it, Publican Quality Meats rules.

    I only really came in here for a sandwich. But, I left with slightly more than that. Funny how the world works. Granted, I didn't leave with any meats, but the breads were way too tempting to not buy a loaf of. The olive bread roll I got was extremely good. Thankfully I still have some as for once I've wanted to savor it instead of demolishing it.

    More onto the sandwich. Normally I'm not the biggest bleu cheese fan. But, the spread they had on the roast beef sandwich was killer. It may have been a slight bit too much for me, but again, I'm not a bleu cheese fan so for those that are fans, you'll absolutely love it. They packed in a ton of roast beef as well and was some of the best roast beef I've had. Bar none, hands down.

    Many returns are due in the future. I need to try some of their cuts and more of their sandwiches. I'm looking forward to the returns as well.

    Sandwiches are hard to screw up but they are also hard to perfect. The meats, cheeses and even the bread at PQM brought this place pretty close to perfection.  It's everything you'd expect from a Paul Kahan sponsored butcher/deli.  The roast beef with blue cheese was amazing and the pork belly gyro was just delicious. We finished it off with a buttermilk and hazelnut cupcake and some ciabatta with fruit preserves. You know it's good when you see "the man" himself buying steaks while you're paying the bill.

    I thought the parent restaurant was just all right with the food being good but the service kind of smarmy and the price being not worth the what I got. So, when they opened the quality meats place next door I didn't really give it too much attention until my friend suggested we come to this place for lunch.

    By the time we showed up around 11:30 the place was getting crowded but ordering was pretty easy, when one of the cheery workers told us the system and then one of the people behind the register came around when no one noticed his register was open and got us.

    I saw the Muffaletta on the counter and couldn't resist it. My friend asked about the Green Garlic soup and he made it sound really good so I got a cup as did my friend. My Muffaletta was delicious better than the one I had in New Orleans-in fact, after having a lackluster Muffaletta in NOLA I swore off trying that sandwich again. The Muffaletta here restored my faith in the sandwich and maybe even in humanity...okay so maybe not that far but it was delicious, huge and every bite had that sweet spot of salty/meaty/crisp/moist that you get from a sandwich with the perfect ratio of meat/veggie/bread.

    The Green Garlic soup, came and went, and it was similarly tasty with a surprisingly meaty mouthfeel even though there was no meat in it. Washed it all down with a couple of easy drinking beers right at the counter and it was a great meal.

    The only issue came when my friend tried to close out his tab-he wanted to take order some food to go for his family. He got up and ordered and knew there would be a wait but it seemed a little too long but it was getting busier so we were patient. Eventually, we waited a while and had to ask 3 different staff members about the status of his order they were all helpful but they couldn't really get a straight answer until one of them came with a bag with his sandwiches and we were walking out when the raisin bread he also ordered wasn't included. We went back in and our original cashier/order taker knew there was a problem and remedied it by just wrapping up the bread himself.

    Aside from that little snafu in the ordering/tab system it was a great meal and I'd come here before going back to its big brother.

    A "corner deli" from the folks who brought you Publican, Blackbird, Avec, and more. It is a pretty cool idea.

    First, like all the other properties, buzz is the buzz here. So we showed up at 11 on the suggestion of a friend and waited a little while then shared a table with people we didn't know (no problem for me). It was actually fine since we all asked what everyone else was eating so it felt like we were really getting a sample/reviews of most of the menu. I am not a fan of the buzz-wait in line-theme these properties have, but what the heck, it was new, and I wanted to go since I like the Publican.

    Interior is sparkling, but looks like it could have been built in 1930. Very cool tiles and a great little meat rack featuring pretty gourmet selections of sausage, steaks, etc. We ordered sandwiches and a cold Charcuterieplate and shared a soup (which they were nice enough to split into two bowls). The Charcuterie was yummy, but there were a few things I didn't like since I am not a fan of the "everything that Peasants used to eat is now gourmet" school of food preparation. Just because grandma came over with some blood sausage stuffed in her bloomers does not mean that they would have eaten this stuff if they were not poor. The rich never ate that yucka-yucka stuff. There were only a few things on the plate that failed my "eww" test (thank goodness they had no whipped pork fat!). The mortadella was yummy as all get go!

    The soup was a potato leek and was perfect. I don't want to know how much fat was in that stuff, but it was amazing. We split a roast beef sandwich which was good, but I would take a pass on it next time.

    This is also a meat market and the staff are very good at moving things along so you can go here and get some great sausages or steaks for your next party. They also have a selection of fresh artisanal breads (yummy stuff!), and spices, oils, and condiments on shelves.

    The bathrooms are in the basement along with a giant kitchen and a pretty large meat cooler. Wow, these folks did a build out thick in stainless steel and tiles. Top notch work on the kitchen, the public area, and the bathrooms were even super nice.

    I will still hit up my old school meat markets on Milwaukee Avenue in Avondale for Polish, and the folks along Grand Avenue for Italian, but this place is a welcome addition to the high quality food scene in Chicago to be sure.

    A few tips: Parking is a pain around here!  So, get here early since you will be dodging meat trucks from the warehouse district as you search for parking.  No reservations is not such a big deal since they are fast moving folks in and out. Don't expect a refill on your coffee. They are running fast here. If you want to chill out and chat with friends - I suggest someplace else.

    I thought I've had a turkey sandwich, and you probably have too; but you've never had a sandwich until you've gone to PQM. I am usually very hard to impress, and when I'm paying $10+ for a sandwich, my expectations are going to be high. Like I said, I thought I knew what a turkey sandwich tasted like until I had one from here, unbelievable. Their Better than Gyro sandwich is spectacular too.

    Everyone working there was really nice and great service was all around despite how busy the place is.

    I like the staff at PQM even more than the folks in the restaurant. Super friendly and extremely helpful. When I was waiting for my sandwiches Trisha (I think that was her name) gave me a tour of the downstairs kitchen and chefs table. It smelled like what I would expect heaven would smell like if I believed in life after death.

    I had the Gyro with pork bell and it was like a Greek burrito. That was absolutely delicious. I also brought home a loaf of  raisin/walnut bread and it extremely addictive.

    This is a neighborhood market and sandwich shop done right.  A lovely layout, menu, and selections of deli items. I am very happy it's new in my 'hood.

    Sadly everything that the 3 of us ordered was over salted.  I wanted to love PQMs but I was just left with a lot of thirst.

    I will be back... so I'll let you know about next time.

    I got a cool vibe walking in the door and that quickly went away as I tried to figure out how this whole thing worked. I couldn't figure out where to order, how to get a table or where I got the counter numbers. As it turns out the flow goes according to the crowd. if its not to crowded you can seat yourself and someone will come get your order. If it's crowded you order at the register and they will bring your food. I still don't know  how to get a number to order at the counter for takeout without asking the cashier.

    Getting past all the awkwardness I ordered a "not your typical gyro" made with pork belly. It was nothing like a gyro. It was lacking the amount of meat found in a normal gyro and the wrap was more like a chewy wrap than a pita. I did appreciate the little custom sized ziplock bag for my pickle! I also got a bean and kale soup with ham. It was fresh and comforting but a tad salty.

    I love the lively atmosphere inside. Stepping into a busy place off the quite weekend streets of the industrial west loop hood always makes me chuckle. They also have a cool collection of fun local food products which I cant wait to go back and buy.

    The precooked sausages in the butcher section are awesome and easy to prepare at home.

    I tried most of the sandwiches and they are all quite tasty.

    My favorites are the:Better than a Gyros, lamb meatball, and turkey.

    I was not a fan of the Mortadella ham sandwich.  The rye was too greasy and the Mortadella was overly cooked and slightly burned.

    I am lucky enough to have two wonderful friends who waited out the lines and crowds to bring back three sandwiches for us to share during my dinner break :) I never had to experience some of the downsides that others seem to be griping about, and just enjoyed these insanely good sandwiches. We tried the yellowtail escabeche (mmm lime aioli), ham muffaletta (oh the joys of the radish snap pea salad!), and I believe the sopressata sammy (might be lying). The quality of the meat is, as expected, top notch, and the ingenuity of the combined ingredients and flavors a real treat. I wasn't the biggest fan of the ciabatta they used, and I know it's a bit silly but couldn't they have tastier pickles? Overall though really superb sammies.

    Great purveyors of unusual meats and sausages; lots of good things made in house. Have not eaten at the deli slide. Get here early on Saturdays as the line at the counter builds up. The only big pain? While the staff is great, I have yet to come on a Saturday morning where there are not multiple rude, oblivious customers who do not care about waiting their turn. Dare I suggest giving numbers out upon entry?

    There was/is a lot of buzz around this place, so I kind expected the hype to have outstripped reality. Not the case.

    My wife had the ham sandwich on rye (paired with the Three Floyds rye beer) and I had the lamb meatball sub, both of which were outstanding. The meat is every bit as good as you'd expect from a Kahan restaurant, and the construction and ingredients in the sandwiches are impeccable. The staff was friendly and everyone was having a good time. I'm looking forward to going back.

    The people complaining about service (when they show up at closing) and crowds (about a new offering from the city's top restaurateur) are typical Yelp knuckleheads. Ignore them and enjoy.

    Preface: I love Publican, meat, delis, New York cozy (cramped) dining, and good service.

    Time: Saturday about lunchtime

    The Heroes: Very pleasant staff , fantastic soup, and great pork belly gyro.

    The Villains: The confusing set up in ordering, sitting, finding where to pay and trying to decipher how they are all tied in (which they are), sitting so close to my neighbor that they were unable to cut their sandwich without me having to leave the table, and i was unable to push my chair back an inch without hitting a server or the person behind me, and the best part, whenever a shopper came by to peruse the refriderator section I got an up close and personal meeting with their derriere (Well, how do you do?)

    The conclusion: Focusing on the good things, the people were nice and the food was good. But nothing was that spectacular enough for me to a special trip back, especially on the weekends and its not convenient enough to pop by for a phone in order.

    Definitely a cool place, a bit packed on weekends so you have to pick the right time to go. If you want to check out their deli or other ingredients they sell there I would not go on the weekend, with the horde of people there waiting to order a sandwich it can be a little uncomfortable.

    Sandwiches haven't really blown me away so far. I've had the Gyro and the Muffaletta and thought they looked better than they tasted. Lamb meatball sandwich is the next one on my list.

    What is great about this place is the butcher and all the difficult to find cuts of meats. I've honestly been shocked at how hard its been to find Berkshire pork in Chicago given that its Chicago.... this place has it as well as a wide variety of other great things (artisan breads, foie gras, pate, etc). I live a few blocks away so this is now my go-to spot to add a little something special to my meals.

    PQM is everything I want in a deli. It's the type of place you can pop over to on a weekend morning when the rest of the world is sleeping in. Grab a couple eggs, some bacon, and a loaf of miche all while listening to Biz Markie's "Just a friend". Then head back to your place for a lazy mid-morning breakfast and pass out on the couch. I can picture my weekends filling up already. The thing I appreciate most is the source of the ingredients. I wasn't able to get up close and personal with everything for sale but it seems as though most items come from nearby farms.

    So I fully admit that I will be using this place differently than most customers. At 1 o'clock, every person walking through the door was in line to order a sandwich. I am the customer who will take more advantage of the grocer/butcher side rather than ordering frequent sandwiches. So what do they carry?

    In the back fridge/freezer section you'll find a variety of house made stocks, locally sourced milk, cheese, rabbit, goose, and specialty items harder to find like guinea hen and even quail, I believe. I wanted to window shop even more but the crowd made it rather difficult to walk around. Near the front you'll find numerous breads, flour, specialty pops, and a variety of general pantry items that I look forward to browsing in the near future. Again, the crowds made it difficult to spend more than 2 minutes in here. I needed a good 30 to read labels and really get an understanding of what they offer!

    The good news for me is the place opens at 10 AM while lunch isn't served until 11. This gives anyone a good hour to shop for groceries before the lunch crowd fills in. I recommend you avoid heading here around lunch if you aren't getting a sandwich. It's not worth fighting the crowd to pick up some milk.

    I did order a sandwich on my trip - the 'better than a gyro'. So, was it better? Well, I'll let you determine if it was better than a gyro but I did like the sandwich. I never met a belly I didn't like.

    Another home run for Paul Kahan. I'll be back more than I care to admit.

    Ok, before everyone goes getting all excited about this place let's take one GIANT step back and remember that this is a SANDWICH shop (it's also a butcher shop, but let's stay on point here.)  You are only allowed to get so excited by a sandwich shop. You cannot get as excited about a sandwich shop as you can by it's neighbor across the street, or it's world famous neighbor up the street, or it's creative neighbor two streets away (Publican, Next, Girl and the Goat....respectively.)  Ok, now that we are all settled down let's dive in.

    I've been to this place 3 times now and must say I've had a consistently good sandwich shop experience all three times.  The fried smelt sandwich has easily taken the prize as the best thing I've eaten here.  Shame that smelt can't get any respect, even right here off the shores of Lake Michigan.  So it's good to see the little fish getting some play in the menu.  The smelt is medium fried and is offset by a really good coleslaw on a great ciabatta bun.  This got 4 stars from me EASY.  I think it may be off the menu, so tough luck.  If it's there though....get it.

    The other two times I've gotten 'Sarge's Mom's Meatball' and the 'Better than a Gyro'.  The meatball was just different.  The meatball didn't taste like a meatball, and the mint didn't offset the bravas OR the meat enough.  It's like they started with a great concept and tried to decide how to mute it enough so it wouldn't taste like anything.  Slap that on a wildly awkward lobster roll and you have a sandwich with a serious identity crisis.  Maybe they'll grow this thing up, pop the mint, spice up the bravas and find a suitable bread and you'd be in business.  The concept is terrific.  'Better than a Gyro' on the other hand was a well executed sandwich.  The pork belly was so crisp in some places it tasted like bacon, and so soft in others it tasted like a slow braised shoulder.  This was a terrific combination.  The vinaigrette was absolutely terrific and added a nice sweet kick to offset the salty pork.  My only complaint about this sandwich was a tasteless pea shoot lettuce thing that overwhelmed in quantity, but underwhelmed in flavor.  I would have like to see them put some heat on this and wilt it down a little to draw out a some additional flavor.

    The service is good, and if it's not they'll compensate you without your asking.  I've even turned DOWN compensation because I didn't think my minor wait justified anything free (I waited 5 minutes after my compatriots got their sammies).

    Be forewarned that this place is ground zero for trendy hipster yuppies.  Just going here will make you question if you are one.  Stay strong grasshopper, get your sandwich and don't gush out loud about the hard to find goods hawked in the store and the great flavor profiles of the sandwich (save it for Yelp!).  Take a deep breath, remind yourself it's just a sandwich and move on.

    Publican Quality Meats gets nearly everything right, but the service was no good.  I must have caught them on a bad day, because there was a certain pretentious tone of how it was the customers' privilege to be here.  It sounds like they've gotten better about it since my visit.

    Also, a tip to visitors: you need to get here well before they close, I'd say 20 minutes prior, because even if you're inside the shop before closing and you wait in line past that time, they shut down their kitchen at the strike of the hour. I can understand the shutdown policy though.  It was mainly just annoying waiting 10 minutes for a staff member to scoop up my pre-made tuna sandwich that was sitting on the counter, while multiple staff members were idle.

    The tuna sandwich and chips were good, if not slightly overpriced at $13 (with tax), and the setup of the deli is well done. As I mentioned though, it's too bad when service ruins an entire experience. Hopefully they can (and it sounds like they did) learn from their mistakes.

    Being the big Kahan fans that we are, the bf and I went to PQM with high expectations. Upon walking in, it is clear that Kahan is serious about his craft. The selection of meats and cheeses is great, but pricey. The butchers are knowledgeable and eager to make recommendations. There is also a decent selection of breads and condiments. I even was able to find the Rick Bayless granola that is sold in select stores.

    There is an expresso station that offers some samples of breads. We tried the gorgonzola and cranberry foccacia that was the perfect contrast of salty and sweet. I could have easily eaten the entire loaf. Because we already had dinner plans, we did not eat here. The muffaletta, however looks delicious. I will be back again to eat!

    This place was really disappointing

    The sandwich I had, the Train to Tuscany, tasted really good, my only gripe being that the dressing was a bit too sweet which overpowered the meat somewhat. The pickle was good too. The house-made potato chips were very greasy and some were flabby, even bag of Lays would have tasted a lot better.

    But the real let down was the service. The place is way too small so the to-go patrons are crowding around and it's difficult to tell if there's a line to actually order or not. If you choose to dine in (don't), it's sort of like the setup at Corner Bakery where you get a number and they bring the food out. The number is on a big blue plate sort of thing so it looks as if there's an auction about to break out at any minute, which was slightly comical.  But then a hostess-type person tells you where to sit (you don't get to choose for yourself) and the place even has the gall to tell you to bus your own table. Have fun doing this at lunch when there isn't even room to get out of your seat because the tables are way too close together. Thankfully the signs telling you to bus your own table are small enough you can pretend that you never saw them.

    I don't think I'd bother with this place again. It's not worth the hassle just to get what amounts to a slightly above average sandwich.

    The gods smiled on Chicago when Paul Kahan decided to open the butcher shop version of the Publican. For that, I thank you, sir.

    There's something different about eating a salami when you've had a conversation with the person who made it. When you've looked him in the eye and felt the love and passion that went into the process. It doesn't hurt that everything is f*&$%ing amazing.

    Each taste we had was better than the last and we ended up with more sausage, cured meat, rillette and freshly baked bread than we could possibly have eaten in a day. The house made meats & sausages (of which there are many) are really well priced, and for the amount of food we bought we paid significantly less than we would have somewhere else.

    Let the staff advise you- they know what they're talking about. And don't fear the unknown! You'll be shocked at how delicious a little bit of blood can be. Can't wait to go back!

    All you really need to know is that it's amazing. A welcome addition to the neighborhood and the city.

    I stopped in for lunch today around 1. It was busy but not as crazy as I was expecting. Just like The Publican, everyone there is super friendly. This was the first week they were open so everyone was more then happy to explain what they offered and how it worked. I hope that same attitude continues.  Since it was their first week open they were only offering two sandwiches, a salad and a few meat and cheese plates. In my opinion, the only sandwich they need to have on the menu is the Prosciutto Cotto Muffaletta. Holly Moly! It has to be one of the best sandwiches I've ever eaten. I also got to try the turkey breast sandwich. Which was also really good but next to that Muffaletta, it was just ok. I'm looking forward to seeing the full sandwich menu next week. Yeah that's right I'll be back next week.

    They also have a couple beers on draft which pair fantastic with the meat. Along with the draft beer there are a few bottled beers as well that you can buy. My only issue is the corkage fee seems a bit high. Buying a bottle of Jinx Proof with their corkage fee was $8. I like Jinx Proof but not for $8. You could always buy the bottled beer to go and not drink it there, which makes for a nice corner store sort of option for anyone who lives nearby.

    Really, really like this place. For those who love cooking at home and love meat, this is your butcher haven. They have duck breast, duck confit, rilette, ribs, pork belly and shoulder, boudin blanc, blood sausage, rabbit, squab, quail. For your cooking pleasures, they have housemade pork belly braising stock, duck fat in containers, etc. Other items include hand rolled butter, organic eggs, organic milk. They offer sandwiches as well with seating at the butcher store. The lamb meatball sandwich was unforgettable and delicious. They also have fresh breads (organic rye, wheat, baguette).

    What makes this (gourmet) butcher stand out among the other stores in this meat packing district is that the employees at Publican Quality Meats actually know their stuff and can give you advice on your meats.

    As I'm typing this, I'm eating the pork pie which I bought from this place and it's delish.

    Strolled in at 11:30 and was still dead for an early lunch. Went with the pork belly gyros. It was awesome but I waited 20 minutes(no lie) for this sandwich. And while I do not have an issue with the price of my sandwich, everything else I saw behind the counter seemed way$$$. Will most likely stick with Bari

    For whatever reason, I ended up going to Publican Quality Meats on a full stomach...big mistake!!! I had every intention of trying their albacore muffaletta sandwich (which I'm told has a soft-boiled egg hidden inside) with butter poached albacore and tuna infused aioli, home-made muffaletta, and more (all ingredients made in-house)...drooling.

    Since it is week one of being open, they aren't doing to-go orders yet. I knew there was no way I was hungry enough to eat it right then and there, so I'll have to wait (sigh). But I got to see it!! They make one giant sandwich on a whole loaf of focaccia (also made in-house, as is all of the bread!) and they cut you a piece to order. Pretty smart. It looked so good.

    So I took some time to look at all of the retail items and the ridiculous meat case. The room was abuzz with customers and I kept hearing snippets of "I haven't had this since I was a little girl" and "best thing I've ever tasted" and "this is amazing, can I have a beer while I peruse?" with an answer of "here you go!". There's a coffee bar with some beer on tap.

    Now, for what I ended up getting: I was helped by Erling, who clearly knows his shit. I bought the most delicious rillette I have ever tasted, along with some in-house marinated steelhead roe. I was too taken aback by the glorious tasting portion I was given of the roe to actually ask what was in it...but it tastes like citrus, cranberry, spice of some sort. So good. I will be back for more. The rillette was too good to be true and that's all I'll say.

    Erling offered me a taste of something special that I ended up buying (of course), olive oil poached pork loin sliced thin, drizzled with olive oil, salt, and pepper. It looks raw and pale in color, and tastes rich and fatty. We ended up wrapping it around some petit basque cheese at home, and almost died. I also got some ham from Kentucky that was great, but so salty that a little bit will suffice a craving.

    I also bought a killer bottle of French Corbieres that really went perfectly with the stuff I bought, and some mascarpone from the dairy cooler. I quickly left as to not empty my whole bank account. However, the prices were VERY FAIR. I was surprised when I looked at the receipt. This is my new specialty shop for sure.

    Oh, and for the other reviewers who were turned off by the chaotic service: THEY JUST OPENED...just chill out and enjoy being served quality meats from some of the most talented chefs in Chicago.

    I wish there was a 4.5 star...  The food is fantastic - anything called "better than a gyros" and im sold!
    What looks like organized chaos at the counter may be just that - we ordered as did others in line and everyone got their food - except us? 15 minutes go by and they say it will be right out, 20 minutes+.. they offer us free drinks. then shortly after our food comes out they give us 2 free sandwich coupons and what turned out to be an amazing lunch.  If i was in a hurry it could have gotten ugly but i was calm this day... :)

    great food - great recovery on what could ahve easily been a 1-2 star performance.  we all make mistakes, its best to own up to them and make it right!

    My wife and i stopped by for lunch.  We had the meatball and the pork belly 'Gyro'.  Both were excellent and came with home made potato chips.  Shop has a great looking selection of fresh and cured meats.  

    Service is a little shaky/slow.  I think they are still figuring out the best way to manage customer flow and fulfilling orders.

    FYI, no take out yet. I assume they will be adding that in the future.
