Great restaurant in a unique boutique hotel. Well prepared food, excellent service in a rustic, refined atmosphere. After 11 days travelling across Canada, it was the best place we ate, by far. Any serious foodie should eat at Panache while in Quebec City.

Loved this place. everything i tasted was yummy and service was great
Blown away, pure and simple. We are self-admitted foodies, and enjoy "the best of the best." Billed as modern québécois cooking, it lived up to my highest expectations. We had the Signature Tasting, WITH the wine pairing (a half glass with EACH course). The "pate" de foie gras, with brioche and a line of raspberry "chutney" was an tasty, smooth and creamy opening. Literally a perfect start to the meal. The crab cake was crispy on the outside, perfectly cooked, and chock full of flavorful crab. It exceeded all expectations of a "crab cake" - this was food perfection. Next was the patridge - a perfectly moist piece of white poultry, on the bone - yet sliced - with a delicate glaze and over a foie gras emulsion. Absolutely delicious! The coup de grace was the lamb, rolled and cooked in a sealed, vacuum bag; thoroughly cooked but with a pink, rosy color throughout. A big "wow!" We added the cheese plate as our own creation (all local cheeses), which was super tasty but totally unnecessary. For desert, they brought us a strawberry shortbread with
a "tube" of ice cream (I think) laced within. Unbelievable - so good! The service was professional, well paced, knowledgeable and friendly. The wines perfectly matched each dish. Overall, a true five star experience.
This was the first sit-down meal in my East Coast Canadian trip, and it truly deserves exceptional praise. If you're walking to the restaurant from the Quartier Petite Champlain, let me tell you.. the red doors are not for opening! We tried opening half a dozen doors (no doubt the diners inside laughing at us) until we walked around the corner to the entrance of Auberge Saint-Antoine, a gorgeous hotel where I would have loved to stay in if our stay wasn't so short. That's alright, just means I'll have to come back!
The ambiance is peaceful, whether you sit on the patio or up in the rafters. Reservations are definitely recommended, and we were very lucky to have been able to walk-in. The centuries-old wooden beams add a touch of rustic in contrast with the white tablecloths. The only English menu is your waiter.. diner be warned, as what she calls a "little chicken" is a "duck." It's a slow leisurely meal, which is perfect for settling into the swing - or really, the saunter of Quebec. Though their food wasn't the best I've had, every dish was enjoyable and beautifully presented - from a tiny copper pot housing veal sweetbreads to a shotglass full of salmon foam.
Their lunch price was almost a bargain for the three-course meal we had, but they could do with a few more waitstaff. A very enjoyable restaurant, perfect for business or romance, their menu is seasonal so definitely try it out more than once!
Four and a half stars.
A very intimate, warm setting. We had two appetizers (roasted tomatoes, a shrimp special); Sauteed scallops and pan-seared char; a cheese plate; a dessert (chocolate, chocolate, and more chocolate).
This felt like several delicious meals within a single meal. The vegetables that went with the main course were brought out as a single plate for my wife and I to share - mushrooms, green beans, potatoes - each cooked in a unique way. All in all, we enjoyed over a dozen different flavors within our meal.
The service was the only downside - it was professional (though the waiter pushed the bounds a little by trying to upsell both the wine and cheeses), but lacked warmth to really make this a 5-star pick.

This place rocked the house on several different levels. The staff was amazing, the decor/ambiance design was impecable. Truly fantastic sitting in the old building wondering what it used to be. It was beautiful.
Every mean is proceeded w/ a an amuse busche. These were highlights.
The apps/entrees were delicate. Balanced. Perfectly portioned.
My only complaint is that the peas didn't add any flavor to the arctic char. Let the char stand alone. Felt like they were a color additive, not a taste one. I'm picky. sorry.
All in all, totally worth the $$$$ (and it is $$$$). Do it. and do it well.
