OMG the chocolate cake is to die for.  I can't imagine being able to finish it without the help of at least 4 or 5 very hungry chocoholics.  It was quite good!

Nice setting at inflated prices. Service was very good.
Clam chowder was sadly, lukewarm on a cold afternoon, but the waiter certainly rectified that when I casually mentioned it to the bus girl, . I really didn't think he would bother with us after that, as this has always been my experience at other hotel restaurants.

The BLT was just okay, but the fries were actually really, really good. It would have been better had he initially offered us some seasoning for the chowder and sandwich, as again, this we had to request.

Overall, a bright welcoming place if you are attending a conference, but with all of the competition in the area, I would certainly not return here unless out of convenience when conducting business.

Came here for lunch on the weekend at 1:30pm because I noticed that black cod was a noon-time food option, and y'all know I can't say no to black cod. But when we sat down in the near-empty place and were handed the menus, I was surprised to see that it was purely a brunch menu. It had some of the same stuff as the lunch one, except it was missing (can you guess?) the black cod. Sad face. I asked about it, and the server replied that they only serve brunch on weekends, even though their website says lunch is served daily. Clearly it needs updating.

We were given some delicious bread that was warm and soft. And, since it was 1:30pm, we devoured it. Our food choices for the meal were: seafood chowder, chicken quesadilla, and a reuben sandwich. Despite the website saying that lunch is served until 2pm, our server quickly put our order through without fuss. The first to arrive (literally within a minute of placing the order) was the seafood chowder. I'll be frank, it was the pits. It wasn't bad tasting or anything, but it was basically cream soup with bits of carrots and celery and onions, ONE sushi-sized piece of salmon, and topped with a teaspoon-full of shredded crab meat. Not really what I pictured for seafood (especially when the menu said it would have clams, and when, you know, it's a seafood chowder). So that was a strike right there, for $9.

The quesadillas were better, though the avocados seemed more like guacamole to me (I didn't see any avocado shape, it was just mush). It was tasty though, and a good filler for an appetizer. The reuben was also a good choice, it was definitely filling and oozing with cheese. Their fries were probably the highlight of the meal - they were hot and crispy and salted just right. Okay for $14.

As we were paying the bill, we noticed a pricing error with the quesadillas from what we saw on the menu. We asked the server, who looked at it and said he would go check - but I suspect he only went to his online ordering system and noted the price from there. He quickly came back to say that the price on the bill was correct and then walked away. Husband had to go find an actual menu to show him the error. Strange reaction, the server told us the menu is old and needs to be updated, and the correct price is the one on the bill. I raised an eyebrow, but it didn't seem like he was going to budge and we didn't want to cause a scene, so we left it as is.

Luckily for us, the waiter returned a few minutes later as we were about to sign our receipt with the difference in cash. A slight redemption.

Overall, it's a nice place and I can see that it may be popular on the weekdays for lunch or perhaps during a nice dinner. It's probably a great choice for those staying at the Hyatt (I think that was the case for some of the diners there), though I don't know if I'll return.

Breakfast buffet is overpriced for what you get, but I'm sure if you get a bed and breakfast package it works out as the restaurant was very full both days on the weekend. Good attentive service both days. Had lunch there today, running a burger promo - both burgers were a little hyped up in their descriptions but tasted good, fresh hot fries, good service.

It's bit expensive than I thought. Me&my bf had lamb, steak, tuna tataki salad&banana split, came &100 in total plus tips. I'd rather go to The Keg for a better&nice meal. Btw the dessert took me 20 mins it's like forever. It was just ok. The only food I recommend is the tuna salad. It's very outstanding.

This is actually for the hotel bar, which I couldn't find on yelp but somehow end up in everytime I stay at the hotel. The bartenders are nice, they have some local seasonal brews on tap and they warn you when last call is coming up.  Nice place for a night cap.

WOW, this was the best dining experience I have ever had in memory. I decided to come here to celebrate my birthday cuz I heard that they give out a free chocolate birthday cake. I absolutely loved the moist black cod, and I was SO glad I requested the sides to be changed to risotto because it tasted so good!
My server Oscar was amazing. He was extremely attentive and gave me the most EPIC, BIGGEST birthday cake EVER. It's literally 8 times the size of a normal cake! This Belgium chocolate CASTLE was TO DIE FOR.
It was actually affordable because the cake was free and I used entertainment coupon. And of course I left a big tip!
Mosaic is SO much better than all the other overrated/hyped places for tourists! You should come try :)

My grandmother recently turned the big 8-0 and decided that she'd had enough of Chinese restaurants and wanted "Western Food" for a change.

My dear grandma has particular tastes in restaurants and so we had to find a place that was:
    - nice, but not too nice
    - dressy-casual
    - a little bit upscale but not too expensive (I'm not sure why this was an issue since she herself would not be paying for it)
    - tasty food

Mosaic had pretty good reviews, is located in the Hyatt, and is not known to cost $100 a head, so it was decided.  When you're 80 you can have as many criteria as you want.

Our server (whose name now escapes me, ack!) was attentive and made sure to memorize everyone's names for that special personalized touch.  The kitchen was a little bit slow between courses but our food always came out tasting freshly prepared and not like it had been sitting under a heat lamp.

Things sampled by the table and enjoyed: the tuna tetaki, beet salad, crab cakes, lamb, strip loin steak, paella, and the black cod.  Oh yes, and of course, the ginormous chocolate cake that was on the house as it was a special occasion (a nice detail!).  I enjoyed my appie and my entree, and others quite enjoyed the cake as well.  I'm not much of a fan of chocolate icing so I wasn't as crazy about the cake, but it was really nice of them to bring out something to recognize grandma's birthday.

At the end of the evening we also got some coupons from the server, so I would definitely be back for some less-fancy dinners!

I'm surprised at some of the negative reviews that this place is getting. For a hotel restaurant, I was quite impressed.

Had the Clubhouse. Quite delicious, although three slices of bread per sandwich can result in quite the post-lunch drag.

The fries were also quite good, and actually had the hint of garlic that the menu advertised.

All in all, one of the better hotel restaurant experiences that I've had in this city.

So I was back again for another great Dine Out experience -- the results were disappointing.

Service was ok at most, but not as good as I remembered -- it made me seem like they were not attentive due to the fact that we were going for the Dine Out menu.

Food started with some crab cakes. However, I thought the crab cakes were a bit over-seasoned and it overpowered the sweet taste of the crab meat. I chose my entree to be the Rib Eye, wild mushroom, homemade pappardelle. This was waaaayyyyyyy overseasoned and completely salty. The juice that came out of the mushrooms were just salty and the rib eye was mostly salty except for the pinkish red parts in the center of my steak. On the other hand, the halibut was cooked well and now those who ordered the rib eye wished that they had ordered the halibut.

Dessert came, and the Mosaic Chocolate Cake was alright...except, they forgot to dress one of the plates. In other words, one of the desserts just came without the fancy design of syrups. I would not make a big fuss of it if all the plates were like that, but with the salty entree I just ate, and with the forgetting of dressing just one out of the 4 identical plates that were served, I was very disappointed in the food's quality control at the kitchen.

What was worse was that when I told the servers about the salty food or the undressed dessert, they did not seem to find anything wrong with it and reacted as if I was simply inquiring them to bring me more sauce. For the dessert, the server even asked me, "Do you want me to bring you the syrup to do it yourself?"

Very disappointing service. I can't help but wonder if they were skimping on the dishes served for Dine Out.

    Was this review …?

Breakfast was had here as it's the go-to choice for grub when staying at the Hyatt.  The breakfast buffet had a big spread but I opted to have something a little less.  Had I been starving and/or extremely hungover, I would have gone for the buffet since they had the regular fixins plus Japanese food like miso soup and various pickled pleasures.

I have never said the words 'pickled pleasures' before.  I like it.  These pleasures are also known as tsukemono.  ;-D

Our server was really friendly and very personable.  And they had tiny glass jars of jams and peanut butter at the table.  What can I say?  I'm a sucker for that cute stuff.  Anything mini-size just makes me melt.

A while back I went to Mosaic once more because I was craving my favourite dish there, the grilled Salmon ! And of course, how else could it be, the great Chocolate Cake as dessert.

Reservation was not needed, I got there early but all the times I have been there it was not overly crowded. Though if you know you are going it might not be a bad idea to just ring through for a reservation.

The waitstaff was very pleasant and chatty, plus the Restaurant has a casual atmosphere. One reason why I went here and not to the Five Sails today which has excellent food but is a bit more formal.

The dish itself did not disappoint, fresh and tasteful salmon with crispy vegetables on the side. The Chocolate Cake - a delight as always.

Also, the restaurant offers a full bar. I had a white wine from the Okanagan with the salmon and a Mojito after the meal.

From my breakfast experience at the Mosaic I can say it get's a little busy at times due to the volume of hotel guests that have either breakfast included or decide to have b-fast down there. The buffet has a good variety of food, eggs benedict are great as well. Also you can order a-la-carte though the waitstaff doesnt seem to be all that attentive in the morning as I experienced it during evening hours.

However from my side, I definetely recommend !

    Bon Appetit,
    ~S

Stuck at the Hyatt for a conference, so we had lunch downstairs at Mosaic.
Their baby back ribs with Waldorf salad at $13 is from God. It is on the bar menu, so don't panic if it isn't on the main lunch and dinner menu. For sure pair the ribs with the best onion rings with hot paprika.
So awesome... so fancy... such a great view of Burrard, and just a nice place to hang.

My rating is solely based on the dish I had.

My coworker and I took a client there for lunch due to its proximity to our office.  It was my first time there and I usually don't crave for hotel restaurants.

But was I wrong after taking the first bite of my Thai Fry.  I wanted something easy to eat so I won't make a mess because I'm prone to staining my tie with food.  It's a very simple dish and it looked very simple and non-chalant ... ground pork cooked Szechuanese style (spicy) with long leans and garlic on coconut basmati rice.  It was amazing.  Although the pork was spicy and I'm usually not partial to spicy food, the flavour was tantalizing when combined with the coconut and slightly salted basmati rice.

I'm a slow eater so I didn't finish my plate when everyone was already done.  I should have packed it.  If they serve the same dish on the dinner menu, I would have gone back for dinner!!!

We ordered paella, tagliatelle alla puttanesca, and garlic fries. All dishes were very disappointing: paella and puttanesca were cold and salty. Garlic fries did not make any difference from regular fast food fries. Service they provided was similar to that of Dennis or Whitespot... Overall, so not worth the price.

I went to Mosaic for my friend's birthday dinner. And being a vegetarian, the menu is very limited. I picked from their set course, which was $30. The tomato bisque was okay, it was a bit sour. Oh god, I ordered the risotto.. because there was nothing else that was vegetarian on that particular menu (their regular menu had a potato enoch or something). It was terrible, tasted like a bad version of Kraft Dinner, but harder. Seriously, it was disgusting. The dessert was probably the better part of my meal, I had an apple strudel.

Service was very nice, my waiter was very attentive. And the ambiance was nice, but the music was a little odd. Didn't really suit. I heard the place is good for people who actually eat meat, such as their crab cakes or pork chop. But if you're a veggie, don't go, not worth your money.

I don't come here as often as I like, due to a plethora of choices available nearby. But one time I went, my sister and I had a great experience. The dinner time was not busy and the service was very attentive, always checking to ensure we have everything and if the food was good but not intrusive. The food was excellent, my beet salad was amazing! (although there was really 5 beets that's all) and the entree was good, forgot what I had but I left smiling. It is kinda fun to watch people walking by when seated by the window. The low lights make it more cozy.

I attended my work Christmas party cocktail hour here last week.

The layout of the area we were in was kinda funky, but kinda odd for a large group of people (made mingling difficult as it was L shaped), but it was neat nonetheless. They have awesome comfy chairs and booths.

Bar service was excellent. Drinks were a little steep - when I ran out of drink tickets I coughed up $10 for a house white, and a few people paid $20 for cocktail. Ouch.

But I do like, and I think it's an excellent place to have a glass or two apres work.

I have never even set foot in this restaurant, however, I came here only to review their chocolate cake because it is so amazing! One of my co-workers brought us one of their giant square chocolate cakes to work one day. The cake is layers of chocolate cake with chocolate ganache in between and covering the cake. It is honestly the BEST chocolate cake I have ever had in my entire life!!!! It is extremely rich, but it is to die for!!!! Every one in my office savoured each and and every bite of it....I think I may have had 3 servings. I definitely recommend ordering the chocolate cake if you come here, or at least just ordering the chocolate cake to-go for a special occasion.

I would recommend this restaurant for a) convention-going business types with expense accounts; and b) locals with a special occasion to celebrate who forgot to make reservations.

It is tucked away on the second floor of the Hyatt Regency hotel on Burrard downtown, so it doesn't get much walk-in foot-traffic. On a Friday night at 8pm we were able to walk in without a reservation and get a great window seat with a sparkly view of downtown and the beautiful Christ Church Cathedral across the street.

Most places downtown are reservation-mandatory, but you'll be much more likely to get a table here on short notice. Knowing about this spot could really save the day for a husband who forgot a birthday or anniversary. "I know just the place, honey!" She'll be impressed - just to make sure order some Stellar's Jay bubbly from Sumac Ridge when you arrive.

The food is all class, the service is attentive and --in our experience--charming, and it is quiet enough to have a conversation during the meal.  The "small bites" menu features items from $8-15. The wontons are mouthwatering, definitely recommended over the calamari which was just OK.

The "big bites" will run you $21-$38 and might appear small when they arrive. But the accompanying sides are rich and the plates end up being quite filling. The scallops were huge and cooked to perfection - still super moist inside. The lamb was tender, and the halibut was perfect. The steak was cooked as ordered, and the mesquite smoky taste was something different. However, if you're paying that much for a steak, you usually want to taste the meat, not smoke.

If you want the full experience, go for the four-course $60 tasting menu. It includes a small bite, a salad, a big bite and a dessert with coffee.

I won't lie, I hadn't really known about Mosaic Bar and Grille in the Hyatt on Burrard, until we bought a worth-while coupon book and decided to go out for dinner one night.  After researching a bit online, I determined the food to be European with West Coast flair aka very tasty!  I ordered a glass of Californian white zinfandel and sipped while perusing a tantalizing menu.  I made my decision almost immediately after spotting risotto with heirloom tomatoes...I was not to be disappointed!  It has inspired me to cook risotto at home.  My other half ordered the beef filet topped with crab and hollandaise.  We were nearly licking our plates clean! The service was all class and attention, only a little bit intrusive.  After another quick glass of wine and a quick order of delicious poached pear with maple ice cream, we wandered home, warm from drink and happy from a very good meal.
