Louis is one of the Eastern Township's staple establishments. With 3 locations (one on King Est street), Louis has been serving great sandwiches, hotdogs and burgers for decades. Some of the attendants are the same as 25 years ago, when I personally started eating there. Always smiling, always joking with customers.
The poutine is often argued, by people from Sherbrooke, to be one of the best in the province (my American girlfriend, who has suffered my poutine addition during our biyearly Quebec visits, also agrees although I don't). Fries are always fresh and crispy, and the gravy is thick, dark and extremely salty. Minor blemish: the cheese isn't generally fresh. It comes in little plastic pouches that you can see the cooks use.
The hotdogs buns have heavily steamed, and this will stick to the hotdog. They are best eaten "all dressed", which means sauerkraut, pickles and mustard. Their sandwiches are massive, including the namesake Maxi-Louis.
Note: for the poutine, ask for the sauce to be "on the side". Otherwise, given the deep container they use and the ridiculous amount of gravy they generally give, you'll end up with a very messy thing that's closer to a soup than a poutine. -

The best steamed hotdogs!! and the "Poutine" is a treat - squeeky cheese, french fries and hot sauce. Real French Canadian fare!!
