    * Deceivingly simple but very tasty Vietnamese noodles *

    The decor of this new spot is quite simple - a few tables and mostly barren walls.  But the simplicity of the surroundings hide the complexity of the flavour profiles.

    I ordered the "fried chicken soup" and upon first glance when it arrived it looked quite similar to some Cambodian soups I've had before.  The aroma of cinnamon was clear, and then when sampling the broth the taste of fried shallots and garlic blended things together nicely.  This was a surprisingly complex broth, even though it appeared quite clear and straightforward like the decor.  It was filled with a generous amount of vermicelli, bean sprouts, and lettuce.  Photo: http://www.yelp.ca/biz...  

    It was served with a condiment of marinated chilies which had been soaked in what tasted like a combination of vinegar, fish sauce, and lime with perhaps a bit of sugar.  This condiment when added to the soup really enhanced the flavour and brought up the heat level.  Photo:  http://www.yelp.ca/biz...

    Service was very friendly as well, and seemed to know some of the customers who are already becoming regulars.  

    I hope they do well, as my first visit really impressed me.  I will definitely be returning to try some of the other dishes on the menu, and hope they continue to perform at such a high level.
