Galileo buys raw beans and roasts them on-site in their giant metal roastery. You can see the roaster through the window from inside the cafe.
I chatted with Cara, one of the co-founders, and she explained that they now supply beans for many of the cafes and groceries in the region, particularly up at Whistler.
They have now also opened a second cafe in the Adventure Center up in Squamish.
The drinks here are exquisite, and made with artful flourishes.
Apparently this little neck of the woods is popular for filmmakers, and Cara told me of watching segments from the A-Team movie being filmed across the street from the cafe. If you chat with the staff, they can tell you a number of other movies in which the cafe and the surrounding environment appears.
The location is easy to access from the Sea To Sky Highway, heading north or south, so it's a great way to recharge after the long drive up to, or to prepare for the long drive home from Whistler!

Ugh, I didn't want to have to rate low for Galileo but I am after my 2 visits today. Morning stop on the way up to Squamish and 2nd stop after our mtn biking. I rate 2 stars because the barista. She started spouting off about being from Alberta and how stupid cows are and that they basically deserved to be slaughtered. How they hate people (wouldn't you???) and that they are skittish. A completely ignorant string of sentences spewed out of her mouth.

There were enough people around that she should have known better to keep her ignorant viewpoint to herself. Those that are educated actually know that cattle are very sensitive animals, smart and we should be very grateful (esp those in the restaurant industry) for their existence.  A little respect????

PS the coffee is always good, that's not where my issue was obviously :)

Good coffee on the way to Squamish/ Whistler= awesome. Try the Canadiano- which is an Americano with maple syrup. Don't worry it's just the right amount of sweet.
Pulling off and getting back onto the Sea to Sky highway is no big deal. Service was quick. Unfortunately one of our drinks came out way to hot to drink for quite a while but the coffee was delicious. They also sell some really awesome coffee beans in resealable (e.g. ziploc top) bags. If I were local I would be back often. I didn't have the service problems that Leroy did at all. This place was a little busy but the staff handled the volume well and we found a seat just fine.

Kids, I think they struck gold here... literally and figuratively, as this awesome little coffee shop is right next to BC's museum of mining. The parking lot did not rest as the line of people just get kept trucking through. Looks like both locals and tourists alike have found out about our Sea to Sky little gem of java goodness.

Back when it was the 99'er it served up a pretty big ick, but those days are long gone. Galileo has given me all the reason in the world to avoid any of the fast food traps a few minutes north in Squamish, now it's just good ol baked goods and cafes, just like a road trip intended!

Picks: an americano and a breakfast bun, trumps Tim Hortons or Starbucks any day!

Not sure why all my canadians friends always talk about Tim Hortons as the best coffee in Canada, maybe they didn't try Galileo.

On my way to Whistler I stopped at this place to get a coffee and I was pleasant surprised by the quality of the coffee that they serve. They roast it there and the coffee comes from the roast process to your cup directly and it taste awesome!

Coming from a coffee producer country and having the opportunity to get good coffee in Colombia or Brazil I can tell you that this coffee competed head to head with any famous south america brand.

The place is small but very nice, full of local people (now I know why) and the service is very good and friendly. The latte is made with the beans roasted by them and it is close to a perfection.

They also have breakfast which is a good complement for the coffee :) ; for example I had the breakfast wrap and it was very good. On your way to Whistler stop by, you will not regret it...

This cafe is strategically located where there is NOthing else.
    Result: You can't miss it!
We've been in each time were heading up Whistler way. Who could resist? It's the perfect halfway up, pee stop and the coffee is REAL. That is, that it's roasted right there!
If you're lucky, you could watch them roast beans from behind a window while you drink up a cup.
There is wireless, which I found surprising and impressive. Some locals today sat out front with their fur family. That's what I call telecommuting ! Sitting with a mountain and lake view under the trees. Jeez, life's tough.

I've found the customer service to be flaky. Today though, I noticed an improvement. In the past it was as though they drank too late and got up too early to find their bike tires had been flattened or the room mates had used up all the hot shower water and left no Milk for Cereal.
I'm finding this kind of reception more often than not at many cafe's.

Also, I do believe that you will find Galileo Roasted Coffee at local restaurants.

I had a completely different experience here than any of the other reviews. I found the older, butchy woman that served me to be very unpleasant, abrupt, and rude! She also short changed me and when I pointed this out, she practically threw the change at me without an apology. I ordered an Americano Misto and I don't feel like there was anything special about it! The coffee was good, but nothing to write home about. None of the pastries really stood out to me either. I really wanted to like this place, but I think I got caught up in the hype of Crystal H.s' review the last time it caught my eye as I drove by!

this is my favorite coffee in SW BC. i stop here every day i drive up to ski.

their breakfast options are always delicious and their staff are so great.

i strongly recommend picking up a bag of their house-roasted coffee. the copper blend is my favorite.

Had a 'Canadiano' today--yum! It's an Americano with a hint of maple syrup. Good for me, because I don't like sweet coffee drinks too much, but I do put sugar in my coffee. It had a rich, full coffee taste with no need to add extra sugar. Yum. Next time, I am picking up a bag of their coffee beans.

This is either some fluke location choice or proof that doing something right and a bit of luck will produce rewards. Always freindly - great great great coffee and the wraps etc are also good. We often fight over who gets to do the Whilster run at work because we all love this place.

The on site coffee roasting is also brilliant - sort of a brew pub atmophere for coffee.

    Somebody should franshise this.

I love Galileo! Accidentally stopped by on a trip up to Whistler and now we're just making excuses to go up so that we can enjoy the coffee. Having made a mission out of finding the best coffee in Van we can conclude that it actually resides in Britannia

Nice place to stop for a cup of coffee and baked goods as you pass on the Sea to Sky Highway. The indoor area is pleasant and the outdoor seating (scheduled to be refurbished in July '09)  has a great view (across a highway).

Very good coffee! Fresh roasted right there and nicely pulled using the Swift  Grinder and La Marzocco FB70 espresso machine. Nice sandwich and fantastic view. Well worth stopping in on your way to and from Whistler.
