Loved this place. I ordered the 12 inch Mopsy Kalua Pork pizza. I did think it could have had a LITTLE more kalua pork on it, only so the salty could balance out all the sweetness a bit more. The sauce is very sweet and there is also pineapple on the pizza. So my only thing would be a little more balance between sweet and salty. But I still loved it, the pizza size was perfect. I still had some left over to take home.
I love that everything is organic, and i LOVE the thin and crispy crust. I think the only thing I found...odd?...inappropriate?...perhaps illegal?? was that a 2 year old was sitting at the bar with his father, who was consuming alcohol. I'm pretty sure if you're under 21, you cannot sit at a bar. And yes, I'm from Oahu, so maybe we do some things a little more by the book here, and Maui is more "laid back"...but C'MON! -

I don't write many reviews, but this experience deserved a review. This was our second trip to Maui and we wanted to make it a tradition to eat here every visit.

Able to sample a beer that I was curious about. It was the local brew that they had on tap. It was good. Anyway, our server was awesome (E?) he took his time to get to know us, and tell us the specials. They are so accommodating with 2 choices on a small size pizza- love that! The food was outstanding with all fresh local ingredients which can be hard to find at the hotels and nearby restaurants.
I gave a 5 star rating because of the excellent service, food came out and fast, and tasted excellent! Also, i walked out with a big smile on my face. I am from Seattle, so of course I'm a foodie. This place rocks and I can't wait to come back again! -

Great salad, amazing wood fired pizzas, fun atmosphere, good people watching, and management that regularly supports local worthy causes? Can't get much better than that! (And their website is extremely cute/well designed to boot!)
We enjoyed their very creative take on the "traditional" Hawaiian pizza, with tender pulled pork instead of Canadian bacon/ham. Don't think I'll ever be able to have the old kind again. And everything in my salad was organic, if not local. YUM! -

Wow! What a great place for some flatbread pizza! I normally am the thick, gooey, high fat content pizza type of guy, but this place actually impressed us lots. Thanks to my wifey who suggested we go there, I was a little apprehensive about trying "organic" pizza. It started off with a glass of maui's very own brew, the bikini blonde, then we were served this thin, irregular shaped pizza. Mushrooms, organic pepperoni (which actually tasted like sausage, and every bit delicious) and goat cheese ... yummo!
Okay, I am a believer in organic pizza! The lines were long, but moved fast, the people were so nice and the atmosphere resembled a new aged hippie town. Don' t let that fool you, these people are awesome! Thanks!! -

Bomb ass pizza. Will definitely be coming back. We ate in the afternoon to avoid the dinner rush. Yum. Got half chicken bacon ranch (their special) and half mopsy's kalua pork. WOOO!! Awesome. Our server Nick was awesome, friendly and very attentive. Great service, great food. Couldn't ask for more! Definitely reccomend this place!

We went here based on a recommendation. Staff was do nice and very knowledgeable about the food and where it all came from locally. We got the salad with 11 extra veggies and home made dressing. Fresh Goat cheese made right up the hill. Pizza was to die for.

My favorite in all of Maui. Had the most delicious salad and split the large pizza with half Mopsy Pork and vegetables. The pork was awesome but a little stingy on the pork in my opinion. Great service, clean bathrooms and interesting interior.

This is a charming pizzeria/art gallery? in Paia that uses the freshest ingredients which are all local/organic/gmo free!
The pizzas are thin crust and ingredients are creatively and deliciously used! The 16 inch pizza (large) was definitely more than enough for the two of us to share. We also had the house salad to start with some blue cheese...the veggies were super fresh and cheese delish!
It was a friday night so it was definitely kickin' and had a 20minute wait..but we ended up finding a seat at the bar within 10 minutes so no worries. Great pizza (possibly the best in Maui)...and gives J.J. Dolan's (in Oahu...which I still think has THE BEST PIZZA in the state!) a run for their money. But while I'm in Maui...I'll definitely be coming back to Flatbread. -

The Mopsy pizza is hands down the BEST pizza I have ever had. Our server, Tessa, was amazing and we loved her. The atmosphere, food and people were all just perfect. If you are going to Maui, you MUST go to Flatbread (plus Paia Town is adorable so give yourself time to walk around after you eat).

Awesome Pizza, Awesome Salads, and AWESOME brownie sundae!
After a windy afternoon/swim at Baldwin Beach my group headed to Paia and had a nice snack at Flatbread Company. I ordered the Flatbread traditional salad to split and it was fabulous. The dressing was amazing and the seaweed on top was a nice little surprise.
I had the Vegan Pizza with tomato, mushrooms, spinach, with garlic crust. The Vegan 12" was great, I couldn't be happier. My boyfriend had the Pork Pizza with pineapple and he loved it. What a tasty treat.
To end our meal we had the brownie sundae with coconut ice cream and chocolate ice cream + fresh whipped cream. Wowweee- what a delicious brownie. yum!! The coconut ice cream was also delishhhhh.
Loved Flatbread in the little beach village. Nice little Hawaii afternoon -

great pizza, great beer, and a GREAT member of the local community! they have a strong focus on local organic ingredients and on giving back to the community. they regularly do fundraisers for nonprofits and are clearly committed to their role in maintaining paia's community. we tried both the vegan pizza and the mopsy kalua pork pizza, and both were scrumptiously full-flavored with a lovely crispy crust. it's a popular place so go early and plan on a bit of a wait. it's worth it!

Came in here this past Saturday during lunch time and surprisingly - it wasn't as "crazy" busy as I thought it would be for a weekend. Don't get me wrong - there were still some wait for parties larger than 3...
We sat by the window and ended up people watching... Since I still couldn't eat most of what they had in their menu due to Lent... I ended up getting the following:
-- Jay's Heart - Homemade wood-fired cauldron organic tomato sauce, premium whole milk mozzarella and parmesan cheese baked on organic bread dough with organic garlic oil and our own blend of organic herbs

Half and half of each ... In a 12" .... It was more than enough for me!
The pizza was indeed thin crust... But it wasn't anything special. It didn't blow my mind away that's for sure since I think I've had better. Both were a tad salty and me thinking it'll be "über fresh" - it was oily! I ended up eating half...
Service was ok... The guy that delivered our food looked high but it's Maui so anything flows... (or it could be that he was just dying from the heat of the oven...)
Definitely one of those... "hyped up" restaurant... we came and tried... And that'll probably be the last of that. -

Not gonna lie, every single pizza sounded yummy and the fatty in me was overly excited. It was so difficult to choose just one. Luckily, they allowed us to do half and half. I can't remember what we got but the crust was great and crispy. Add on their special salad and a pint of Maui Brewing Co.'s beer and our meal was complete.
Paia is a small tourist town and consists mostly of family-run restaurants, most which are great! The downside to that is the wait time for dining in. Avoid the dinner rush and you'll be fine and leave with a happy tummy. -

The paintings on the walls here are ridiculous. I don't know who the artist is, but I was drooling over those paintings the whole time we were there. They look like a really lucid dream of what maui would be like to a hippie on acid,,,i approve! (the food is really good too)
all natural, wood fired clay oven pizza. the oven looked like a little eskimo dome. everything organic and free range, from local farms...
we had Kula Farm mesclun and organic sweet leaf lettuces tossed with organic green papaya and carrots from Hale Akua Farm, toasted sesame seeds, organic Arame seaweed and homemade Maui pineapple vinaigrette and added avocado and goat cheese to it to make it even more yummy.
We shared a pizza that was half Mopsy's Kalua Pork - Kiawe smoked free-range pork shoulder, and homemade organic mango BBQsauce, organic red onions, Maui pineapple, blend of Hawaiian goat cheeses, premium whole milk mozzarella, imported Parmesan cheese, and organic herb mix, Kalua Pork is huge here. It is so yummy and salty and smoky and (insert salivation here.)
and half Pele Pesto - homemade organic Maui basil, macadamia and garlic pesto with a blend of Hawaiian goat cheeses, whole milk mozzarella fresh Haiku organic tomatoes, Kalamata olives and organic herbs
For dessert we had a Lilikoi cheesecake. Light, fluffy, and delicious. Totally unexpected mouthfeel. It almost tasted whipped.
This was my last meal in Maui. I have vowed to return!!!!!!!!! -

A must if you're in Paia! Your mouth starts watering the minute you walk in because of the wood burning pizza oven smell. The staff was super friendly and gave us some awesome recommendations! We were able to get a half and half pizza, which was great because me and the hubs were craving two different things. I had the pesto pizza, which was amazing! The salads looked really good too, so we ordered one to go, yum, that was a good choice!

Sooo good. Not much more to add from the other reviewers. We got two pizzas, the kalua pork one and a margherita type. They were both delicious. They are cut into strips, which I liked. The five of us (4 girls, one guy) had leftovers.
Their drinks (from the menu) were yummy, not cheap at about $10 a drink, but pretty avg compared to the prices I'm used to. If you want something cheaper, I am sure if you order a basic cocktail it would be less.
We took the leftovers on our hike the next day. They tasted good cold...they also tasted good reheated that evening. Clearly, we must have really liked it if we didn't mind eating it three times in two days!
Can get a little pricey when you start adding drinks etc, so I wouldn't recommend going there if you are looking for a cheap meal. This isn't Dominos! -

Great Pizza, great salads, great drinks (try the lychee martini) great personalized service. Highly recommended.....if there was anything negative I would say about the place, it's the fact that it is often very crowded which can often mean a 30+ minute wait before being seated.

i enjoyed watching the fellas make the pizza more than i enjoyed the pizza itself!
we were lucky enough to score a table near the wood-burning oven. we could also see the dudes ply and shape the dough, top the pizza and then hand it off to the bloke who probably loses quarts of moisture each hour he has to monitor your pizza in the oven.
i digress. we only had room to "sample" the organic salad and a 12" pizza. i can't recall when i ever said this, but the salad was REFRESHING! the maui pineapple vinaigrette is KILLER on the greens thereby adding this light and surprising accent to the veggies. it's surreal!
the pizza crust ("flatbread") is good and different from, oh, pizza hut or domino's. in fact, if you love phone-call pizza, then don't even bother eating here. your next best-bet is frozen pizza from safeway.
the crust here is near perfection. it is crisp and light, and more "cracker-ish" than flatbread for me. [perfection for me is a crisp crust with a chewy dough.]
anyhoo, we tried mopsy's kalua pork and pele's pesto pizzas. the homemade organic bbq sauce added a zip and zest to the mopsy's kalua pork, whereas the pele pesto didn't have much flavor [other than the kalamata's which i HATE!]. so i guess this is one of those few occasions where you CAN GO WRONG with pesto. bummers.
in the end, i am GLAD we tried flatbread company. the locals seem to like it, so it is worth a try unless you are familiar with their mainland locations! there is also SUPER CUTE children art that adorns the menus and ceilings...it adds a local-charm to this mainland chain. -

This is good pizza. Unique, different and excellent. Don't expect NY style or Chicago style pizza. This is equally good, but different. Made from all local ingredients, even the sausage is ground in their kitchen. The sausage pizza didn't have sauce and being Italian - I'd order it all day long. Same with the co-evolution pizza. The service is excellent. Seth was our waiter. He was helpful, engaging and knew the food. the oven is impressive, the food even more so. Not to oversell, just go, enjoy and eat well. BTW, try the beers on tap... they have a wide variety and are all good. I had the coconut brew (porter), my daughter had the bikini blond. Different ends of the beer spectrum, both tasty.

My fiance and I went here twice for dinner in our one week stay on Maui! Yes, it was that good. Specifically we loved the mopsy kalua pork and the pele pesto. We also tried the sausage and the peperoni pizzas but found them to lack flavor, and thought the red sauce on the pepperoni wasn't that great. The crust on the pizza was amazing though, especially when it was fresh out of the oven. So good!
They are using a real wood fired brick oven and it is probably at least 800 degrees. The pizzas cook quickly with a nice thin crust that is tender and crispy at the same time. I think I could just eat the crust if they didn't have any toppings for some reason.
The second best thing here is the brownie dessert. You can get it with vanilla, chocolate or coconut ice cream. We didn't try the coconut, but the vanilla and chocolate ice cream is divine. They warm the brownie up in the pizza oven for a couple of minutes, and then drizzle the whole thing with hot fudge. I don't really care for brownies, but this is a must-have if you are on Maui!

Had some trouble with getting seated at 3 p.m. today (MLK holiday). Hostess was somewhat unpleasant at first when we asked about the wait time, the people before us were very rude and generally displeased with the length of time they waited before they were seated despite four available tables. I can't really blame her for being so flustered but it still put a damper on our lunch.
Waited five more minutes before she decided to seat us at one of the tables that was initially available upon our arrival. Service from there was quick and pleasant.
Ordered the Mopsy Kalua Pork Pie; excellent crust and the toppings tasted very fresh. I've been here on the weekend at night, it's a busy place. I recommend making reservations so you have a five star experience.
There is also two large booths at the front of the restaurant. Each booth can comfortably fit 10 people. -

LOVED, LOVED this place. All the pizzas here sounded very tasty and I settled for the Veggie. Delicious!!! Most of the items are organic and/or come from a local farm. Seating/atmosphere was cozy fork our party of 11. The paintings from the local artists were awesome, very lucid. The only downside was the wait for each pizza. Other than that fun times all around

Everything is organic or free range right here from maui. the first time i came here i told myself i wouldn't eat here more then once a month. well i was sadly mistaken cause i come here once or twice a week. I am truly addicted! My girlfriend and I split a pizza. she gets the vegetarian with mango BBQ sauce and adds pineapple, and i have Jay's heart which is a cheese pizza.
I'm Hooked on this place as many on the island are, if you haven't been here you will be addicted soon.. trust me!

Great pizza, great atmosphere.
We're familiar with a very similar place up in Warren, VT (American Flatbread), which we love, so we knew this place would probably be just as good. And we were right. We (2 people) split a large and still had a few pieces left over for a snack later on in the day. Toppings are fresh, pizza is delivered piping hot to your table since it doesn't have to go far from the oven in the middle of the room. Highly recommended! -

I had heard about this place from my co-worker... so when my mom rolled in to town, be ended up here for lunch yesterday.
Let me just say... i eat a LOT of pizza.. and have not bee so impressed with what I had found on the island so far... so I decided to give it a go..
I am so glad we did. My mom and I split the house salad with the additions of blue cheese and tomatoes. I have to say... a really good salad.. you know the kind you actually want to eat again and again... are hard to find. Let me just tell you, THIS SALAD IS AMAZING. It was crisp, perfectly dressed and flavorful beyond belief.
We then split one of the daily specials, it was a chicken pizza with avacado sauce... AMAZING. the crust was light and perfectly cooked. The right amount of cheese was just right... and it you want to keep eating after you were full, just so you wouldn't waste a morsel of it.
bottom line....If you make it to Paia... you are a fool not to check it out. -

Solid place. Good pizza. Good service. Not Great an this is probably due to the fact I live near Pizza Delfina in SF so I am spoiled. Sure organic local....blah blah blah.....but they has great pizza topping combos. Just need a topping with a fried egg.
Good place for medium to large group. Not a date spot where it can get loud.
You'll find some locals ponied up to the bar but mostly out of towners like myself.
Staff is friendly and fun and takes care of you expeditiously. They don't suffer from 'island speed' when it comes to service. -

The Mopsy is the best pizza I have ever eaten. This place was so good we came back to buy a pizza for the flight home. The ingredients are organic and locally sourced when possible, but from what I saw 85% of the menu was sourced locally. Eat here, just do it! And if you come make sure at least half the pizza you eat is a Mopsy.

Since visiting Trattoria Zero Otto Nove in the Bronx last year, I have been searching and craving another incredible pizza like they served. Who woulda thunk I'd find it in Paia, but I did! This pizza was OH SO GOOD! The salad dressings that are made in house are also spot on! I love the Flatbread Company, have bookmarked it and can't wait to come back next year to indulge again!
The only glitch to our visit was remedied immediately. We had ordered a 1/2 and 1/2 pizza as one of my daughters is vegetarian but when the pizza arrived we noticed it was all pepperoni. We mentioned this to the pizza chef (who delivers the pizzas), he apologized sincerely and promptly made her her own vegetarian pizza which she happily gobbled up! -

Probably our most favorite restaurant on Maui. Extremely fresh ingredients, great drink and beer list. We had the house salad with Surfing Goat cheese. Man was this a great and simple salad.
We both shared the chicken pizza and the sausage pizza aka flatbread. Both very flavorful and very reasonably priced. The service was prompt and not hurried. The place gets packed quick so go early. One weird Hawaiian law is that you cannot get a beer and a shot at the same time. I guess their laws are also slow in Hawaii... -

in one word...CRUST! Crust crust. What makes a place memorable to me is if they do the foundation of a dish well. You judge udon shops by their noodle and broth. You can judge bentos by the quality of their rice. You judge pizza by their crust.
I recommend coming with a group and a big appetite so you can order 1/2 and 1/2 of all kinds of pizza.
Ingredients play a huge part in making things taste good, but also, cooking method. I've found here is that they are all about is all about maximizing this combination for a truly divine product. Fresh ingredients, and a real woodfire oven built right in. I would recommend the kalua pig pizza and pesto, but basically, I didn't meet a pizza I didn't like. Maybe because the kiawe wood really entices out the flavor of whatever you're putting in there to make it really pop. Or...its good ingredients? Or its just the combination? Guess we will never know. chow down brah! -

The pizza has a great crust, and better yet, a good list of ingredient choices. Their goat cheese is mild, and was perfect combined with the toppings! The signature Kalua pork was delicious, but the specialty vege pizza of the day (Kalamata olives, peperoncini, etc.) was also a stand-out.
Salads are more of the "what you make them" since you choose your own extras.
Large booths (maybe large enough for 10?) are unique. -

This is a mixed review:
On one hand I was so happy to find a place that made pizza for my gluten/dairy allergy! On the other hand they add about $12 to your pizza if you get it gluten free... and even then it wasn't terrific. I had the vegan toppings, which were caramelized onions, peppers, mushrooms, and spinach all from local farms in the area. However, somehow they didn't really taste that fresh or vibrant.
I think the server could sense my disappointment so she suggested a gluten-free brownie. That more than made up for it!
I'm giving it 3 stars because I didn't really enjoy my meal that much, but at the same time I understand gluten-free vegan pizza isn't really their goal and it's probably not what most people are looking for. -

This place was good but I don't know if I'd give it 5-stars (especially after having Outrigger pizza). It just didn't blow my mind like I expected it might. We ordered two 12" pizzas with split toppings on each: Homemade Sausage and Coevolution on one, and Mopsy's Kalua Pork pie and the Carne special of the day (chicken, black beans, corn, sour cream, jalapenos...).
The toppings were pretty tasty but the biggest issue I had was with the crust - it tasted slightly burnt. Also, they didn't seem to put much Kalua pork or sausage on the pizzas either.
Our server was very friendly and accommodating towards us, giving us all sorts of suggestions on what we should try, etc.
Bottom-line: would I eat here again? Maybe if I were in the area anyway. But I wouldn't make the extra effort to drive out just for it. -

I'm updating my review because while I still love flatbread for most of the reasons I mentioned before they've stopped having a special daily salad which was a big part of what made dinner's there so perfect. The pizzas are still delicious, but I really miss the variety of salads we used to order and share over a shared pizza.

This funky, hippy restaurant is amazing! With friendly staff, great food, and a cool feel, you just have to try it! I've eaten there 3 times; 2 for lunch, 1 for dinner. All times were amazing! They have different kinds of toppings, like Kalua pig, goat cheese, and pineapple, that are all local. They're all cooked in a wood-fired pizza oven, and the whole place smells like a campfire! I love it! They even offer vegetarian and vegan options on the menu. It's a fairly big restaurant, with seating upstairs and in the "back yard" as well. I can't even begin to describe how much I love this place - it's reasonably inexpensive, too!

Food: 5/5
View: 4/5 (depends on how you see things-no real "view", but they've got neat pictures on the walls, and you could always people watch or watch the folks making pizzas - the kitchen is open to the rest of the seating area).
Even though Paia may be out of your way, you've GOT to check this place out!
