I recently returned to Bubby Rose's for breakfast. In my previous review I mentioned that the croissants were among the best in Victoria, just a little heavy for my taste, they've improved since then, a little lighter and a little flakier.
I can also recommend the mini cinnamon buns (just sticky enough to be good without being too diificult to eat), the maccha green tea cookies (nice white chocolate chips), and the cappuccinos (they use Discovery Coffee). I also saw great looking french toast (big slices of challah bread) but wasn't hungry enough to try it, maybe next time, and there will be a next time.Listed in: Good Coffee in southwest BC, The Places I Go Out

Bubby Rose's gets three stars for product alone int his review. I picked up two Gluten Free products to take home, the banana bread and their pizza dough.
The banana bread was absolutely yummy...sampled it at work and it was a huge hit. Very moist with great banana taste and no hint of gluten free after taste at all.
The pizza dough, which I used last night to make a totally delish pep and mush pizza, completely exceeded my expectations. It was easy to work with, filled a 12" pizza pan nicely and cooked up beautifully. It did shrink a bit, so next time I won't put the toppings right to the edge of the dough, but I would most certainly buy it again.
So why only three stars for these two stellar products?
SERVICE... inattentive service can indeed ruin the best meal and put a bad spin on the greatest of products. You can produce the best of the best of what you do, but unless you back it up with great service in equal measure, then you are doing yourself a serious disservice.
This visit to Bubby Rose's was my first,although it won't be my last because the products were so great, however, after being sloughed off by one employee and ignored by two others, I just do have to say...Bubby Rose's, "You can do better than that".

Seeing as how the majority of Victoria's coffee houses are closed on Sundays, my wife and I walked for quite a while from our hotel to Bubby Rose's Bakery based on a strong recommendation.
Location was in the center of a nice area of markets and coffee shops off of Cook Street. Looked like mostly locals coming by, which is always a good sign. The food we ordered was okay (basic pastries, I don't remember exactly what) - but the coffee is what I remember. They serve Discovery Coffee, a local brew that I wanted to try. I'm not coffee aficionado, but this was some damn good coffee.
Space was very cramped, and the guy behind the counter seemed to be new to the job for he moved quite slowly and had a lot of questions he had to run by the lady working with pastries in the back.Listed in: Victoria

I love Bubby Rose's Bakery. I work in the area, and find myself there for an Americano and Morning Gold muffin at least 4 times a week - best coffee and best muffins! My husband and I also love their pies - delicious without being too sweet. Also, part of our staple is their farmhouse sourdough bread. I'm very happy that they're using organic ingredients. There is often a long line-up, and I guess some people would become impatient with that, however I find the whole scene fascinating, so I don't mind standing around waiting. This is one of the most unique bakeries I've ever experienced - a real treasure!

Heavenly moist delicious carrot cake. Also tried a Polar bear - some kind of granola chocolate ball covered in icing sugar. It's heavy, cute and white. Other treats looked good, interesting crowd and employees with community information and bulletin board.
I want to stress that they serve Discovery coffee out of a serious espresso machine and when I was there the barista was skillful. Compares to Discovery itself, though the microfoam at Bubby Rose's was a tad bit less smooth.
Definately recommend and will go there again.
Specialties
We are known for our use of natural ingredients - butter, pure vanilla, untreated, unbleached and untreated flour, organic flours, etc. Folks appreciate our status as a vegetarian establishment except for the offering of a Bagel with cream Cheese and Smoked Salmon.
People's favourites include Cinnamon Rolls and Sticky Buns, Croissants, Muffins, Lemon Tarts, Pies, Apple Yums, Butter Tarts, Pizza, Chili, Soups, Sandwiches, Chocolate Tortes, Breads, Brownies, Cookies and Espresso beverages.
We present the following gluten-free options: Lasagna, Soups, Dark Chocolate Torte, Polar Balls, Banana Rice Bread, Bubbymores, Gluten-Free Pizza Dough to go and Quinoa Salad.
Our pie pastry is as buttery and flaky as they come. The croissants are right up there in quality. When "everything matters", you know that we will always endeavour to do our best to please. We are very approachable: got an idea? Bring it on. Got a complaint? Share it - we'll fix it. Happy? Tell us - we'll share that too!
History
Established in 2002
In June 2002 Mark & Valerie Engels purchased the Rising Star Bakery in Cook Street Village. Within three months it was developing its "brand" as Bubby Rose's bakery.
In 2006, having outgrown its location,a new location was established on the same street, seven blocks north on the other side. Here, with a 75% increase in floor space, we flourished. Instead of 14 seats indoors and out, this site is equipped with about 40 total.
Here, we bake most of the sweets, croissants and breads. The first location (Bubby 1), is where we prepare the sandwiches, lasagna, chili, etc.. - all the savouries except the quiches. Down there, we also bake off cookies and muffins in the morning.
Meet the Business Owner: Mark E.
I started in the hospitality industry in 1979, when I bought a small pizza and ice cream restaurant on Salt Spring Island. For most of the past 31 years I have been involved in baking, managing and owning restaurants and food service businesses.
"Everything matters" is very important to me as a motto to live by. This is one of the reasons that we thrive.
The other is our approach to service. My wife, Valerie, is the heart and soul of our business. She ensures that the grandmother's (Bubby's) warmth comes through in the way we treat people. Our staff are chosen with the understanding that we all must treat people who come in as though they are guests in our own homes.
